I have 5 chickens that have just started laying... 5 eggs per day = 35 eggs a week... so far my resume consists of quiche. Any ideas? ?

Egg Foo Yong (taken this from a website) but you can add anything really :)
2 cups bean sprouts (Mung beans) 6 eggs 1 cup coarsely chopped pork, fully cooked 1/2 teaspoon soy sauce 1/8 teaspoon pepper 1/2 cup chopped green onions peanut oil red and green sweet pepper (optional) Rinse and drain bean sprouts thoroughly. Using an electric mixer, beat eggs for 1 minute. Combine eggs with bean sprouts, chopped pork, soy sauce, pepper and green onions. In a small non-stick or cast iron skillet, heat 1/2 teaspoon peanut oil on high heat for 2 minutes; reduce heat to medium. Pour 1/2 cup egg mixture into hot skillet. Cook quickly until set and browned around edges. Turn and brown on other side.
Stack on a hot plate and cover until all of the egg mixture has been cooked. Serve with steamed rice. Garnish with sliced green onions and red and green sweet peppers, if desired.

Oh you lucky thing! A cooked breakfast and omelets for lunch. Make mayonaisse, frittata etc.

breakfast: bacon and 4 eggs or poached eggs on toast or soft boiled eggs
lunch: frittata or omelette or eggs en cocotte
dinner: spanish omelette with salad or homemade egg noodles with cream egg and bacon (italian)
snacks: pickled eggs, hard boiled eggs, egg nog ...

Scotch eggs (the boiled eggs that are wrapped in herbed up sausage meat but sorry I don't have a recipe for that).
I'd try swapping some eggs with a neighbour for some lemons or mandarins at this time of year ...

The other thing you can do is hand some onto someone who may have something you could do with. We used to do that with one of our local cafe's with eggs and an over supply of mushrooms.

Curried eggs are very moorish - mind you I only like the yolks!
