I had this while out for Sezn's a few weeks ago and it was beautiful! How do you sear fish and what flavours would you marinate fish in or mix to place on fish prior to searing? Fresh deep sea blue cod is what im working with.

None... just make some slashes in the skin... salt and grind black pepper and skin side down... . onvce skin crisps up turn over for a minute to colour and serve... .
