I borrowed a recipe book from a friend yesterday and it has a recipe for sand cake. I will post it later for you.

Jessie sand cake recipe -
125g butter
1 cup self raising flour
3/4 cup castor sugar
1 Tbsp cornflour
2 eggs
1 tspn vanilla essence.

Icing Sugar for dusting once cooled.

Place all ingredients in a bowl. beat until batter is smooth (approx 6 min). Pour mixture into greased and floured 20cm ring tin. Bake in moderate oven approx 30 mins. Dust generously with icing sugar when cooled.

I have not made this since I was a teenager, but think I might make it again tommorrow.
