Lots of green beans

Any suggestions of lovely green beans recipes.

I usually do the Mediterranean type recipes with onions, tomatoes and sometimes potatoes and peppers etc.

Any other good recipes? Asian ones too if you have any.

Not interested in chutneys really.

Well - is it that no-one else has a glut of beans or what?

I always thought the recipe board has lots of great new recipes - so please do indulge me with lovely recipes other than my usual salad or the Med type beans.

I have one self seeded green bean vine growing with the sweet peas, not a bean to be seen, but the sweet peas are gorgeous.

Unusual, simple Indian side dish recipe given to me by an old neighbour.
I love it!

Slowly fry a small, finely sliced onion in a tablespoon of ghee or unsalted butter until golden. Add 1/2tsp Chilli powder, 1/2tsp tumeric gently cook a couple of minutes. Add enough small beans or sliced large beans for two, sprinkle over 1/2tsp garam masala, raise heat to medium cook and until just starting to soften.

Lebanese Green Beans with Lamb (Lubea fe lahem)

1 kg lamb shoulder with bone (or lamb shanks)
1 kg green beans
1 medium onion, chopped
800 ml chopped tomatoes (canned are fine)
1 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon allspice
1 cup hot water

1. Brown meat and onions in a little olive oil.
2. Add spices and water and let simmer for about 5 minutes.
3. Add green beans and tomatoes.
4. Cover and bake in oven at 150C for 3 1/2 hours.
5. Remove meat and when cool enough to handle remove bones and
excess fat. Return meat to casserole and cool.
6. Reheat at 150C

Serve with rice. Freezes well.

Indonesian Green Beans

Serves 4

1 cm piece shrimp paste
4 shallots
4 candlenuts (or macadamias)
1 large hot red chilli (or ½ tsp chilli flakes)
2 cloves garlic
2 tab peanut or coconut oil
2 tab water
½ tsp cumin powder
1 tsp coriander powder
250 ml coconut milk
1 kaffir lime leaf
450g green beans or snake beans
1 tsp salt

Blend shrimp paste, shallots, nuts, chilli & garlic, add oil & water. Add spices.

Heat paste with coconut milk and lime leaf, simmer until reduced by half. Add beans and salt and simmer until just tender.

Syrian Green Beans & Tomato Salad

serves 6

500g green beans, trimmed and halved across
3 large ripe tomatoes
60 ml ev olive oil
1 large brown onion, quartered and thinly sliced
4 cloves garlic, thinly sliced
2 tsp salt
1 tsp black pepper
1 tsp seven spice powder

Place beans in a pan with water to cover, over medium heat bring to the boil, drain and set aside.

Peel and chop tomatoes.

Heat oil and fry onion and garlic 5 - 6 minutes until almost golden. Add beans, tomato, salt, pepper and seven spice and combine well.

Reduce heat to low cover and cook 25 min or until the beans are a dull green and tender. Stir every 5 minutes.

Serve warm or cold.

Syrian Seven Spice Mix

2 tab freshly ground black pepper
1 tab sweet paprika
2 tab ground cumin
1 tab ground coriander
1 tab ground cloves
1 tsp freshly grated nutmeg
1 tsp ground cinnamon
1 tab ground allspice

Combine and store away from light up to 12 months.

Green Beans with Curry Leaves

Serves 4

1 tab veg. oil
1 tsp black mustard seeds
10 – 12 curry leaves
1 tsp urad dhal
2 dried red chillies
1 small onion thinly sliced
1 tsp tumeric
400g green beans
100 ml water
salt
2 tab freshly grated coconut

Heat oil & fry mustard seeds. When they start to pop add curry leaves, urad dhal & chillies. Stir 2 min until dhal golden. Add onion, fry 6 min, add tumeric, fry 3 min. Add beans and water, cover, cook medium heat 5 – 6 min, add salt, cook until just softened.

Sprinkle coconut over.
