PEPPERMINT SLICE

I am looking for a kick-ass mint slice recipe, the one i use the base is not very sturdy and find it is very crumbly.

I have never made it, but Chelsea Winters Peppermint Slice is supposed to be amazing.

Chelsea's one is nice but I strongly recommend that you have a mixer or electric beaters to do this as the filling is beaten for 8 minutes in a cake mixer to get the consistency correct. It also needs a little more than an hour to set. Once done though it does hold together well and was a hit at work when I took it for nights. Was very very rich. OMG that base looks awesome though, I want to use a filling recipe i already have but it has a rubbish base. Now i will have wonderful idling AND base! Thanks

I use a chocolate homebrand cake mix 3/4cup coconut and 125 grm melted butter freezes well too

Peppermint Slice

1 cup flour
4oz coconut
4 ozs sugar
1 Tblsp cocoa
4 ozs butter
vanilla
Mix till like breadcrumbs, then press into tin. Bake till set approx. 20 - 25 mins, moderate oven. Ice with green peppermint icing, then choc icing

I'll second that, I've made it several times. The fresh mint is superb in it!
