My mum never used scales, she had a sort of scoop with a sliding thing to change the size and so change the amounts. She used it for all dry ingredients and it seemed to work ok!
I have found a few things I've made for the first time to be a bit disappointing. Particularly with pastries. I think once you are used to the texture it should be then it doesn't matter if you use a cup as you'll add a bit more if it feels wrong. For me I prefer weights to give myself the best chance of success. Also my cup markings are tricky to read and i can't be bothered faffing around getting it level.
