what type of bowl did you mix it in? could be a reaction to the bowl.

Unpeeled carrot go green when you cook it. Was the recipe nice. I have a very nice one that was posted here long time ago. I get a lot of comments on it being one of the best they have eaten.

Benandgabby, is there baking soda in your recipe ? I'm sure someone else asked about this sometime last year and I think the reason was reaction to the baking soda and other raising agents in the cake.

CARROT CAKE FROM MOTUEKA GRAPE AND GRAIN CAFE.
2 Cups of wholemeal Flour 2 Cups of sugar 2 tsp of Mixed spice 2 tsp Cinnamon 2 tsp of Baking Soda 1 Cup of Walnuts 1/2 Cup of Pumpkin seeds (pepita) (I don't use this so optional) 1 Cup of Sultanas 1 Cup of chopped up dried Apricots (I don't use this so optional)
Mix all the dry ingredients together except, (carrots, oil, eggs, vanilla) Add grated carrots, mix well. Whisk up 1 1/2 Cups oils with the 4 eggs, add the vanilla. Fold Carefully into the dry ingredients DO NOT OVER MIX. I use my hands just to be gentle on the mixture and not to over mix either. Bake at 170c for up to 2 hours keep an eye on it. Don’t forget to line the tin, makes a 22cm cake
