I'm away from home (and my recipe books!) so wondered if anyone out there could please post the recipe for Annabel Langbein's sunshine carrot dip. I think it is in Free Range Cook 2! Also happy to see any other carrot dip recipes that are out there. TIA!

Annabel Langbeins sunshine carrot dip.
5 medium carrots,peeled and coarsely chopped 2tbs olive oil 2 cloves garlic 2 tsp cumin seeds 1/2 cup crumbled feta 1/4 cup lemon juice 2tsp runny honey 2 tsb chopped mint,parsley or tarragon leaves Salt and pepper
Boil carrots in lightly salted water until tender, drain.
Heat oil in a large frying pan and cook garlic and cumin seeds for a few minutes, until the become aromatic ( don't let the garlic go brown or it will become bitter). Place in a food processor with remaining ingredients and whizz until smooth.
Add seasonings to your desired taste.
