Noodle sauces

Does anyone have any yummy sauces for noodles!Thanks inadvance.

Brown Sauce Noodles (Zha Jiang Mian)

4 tab brown bean suace
1 tab hoisin sauce
½ c fresh chicken stock
½ tsp sugar
1 tab peanut oil
5 spring onions, white part, chopped
1 tab finely chopped garlic
500g minced pork
400g fresh egg noodles (or equivalent dried)
1 cucumber, julienned
2 spring onions, green part, finely sliced
1 c bean sprouts, blanched

Mash brown beans with the back of a spoon and mix with hoisin sauce, stock and sugar.heat oil in wok, fry spring onion and garlic 20 sec.Add pork, stri-fry until it separates and colours.Add bean mixture, reduce heat and simmer 5 min.

Cook noodles, drain and place in large bowl.Pour sauce over and arrange a third of cucumber and spring onion on top.Serve with rest of vegetables separately to be folded through the noodles.

Rice Noodles with Fermented Bean curd & Seafood

Serves 4

500g rice noodle (or 250g dried, soaked in boiling water 10 min)
2 tab peanut oil
3 cloves garlic, finely chopped
1 tsp ginger, grated
3 spring onions sliced in horses’ ears
1 tab fermented bean curd
12 raw prawns peeled
250g firm white fish in 4cm chunks
2 tab Shaoxing wine
200g wong bok in 2cm pieces
2 – 3 tab light soy sauce
1 tsp sesame oil
1 spring onion in thin horses’ ears to garnish

In wok over high heat stir-fry oil, garlic, ginger, spring onions & bean curd 30 sec, mashing bean curd.Add prawns & fish and stir-fry 2 min.

Add rice wine, sizzle, then cabbage, stir-fry 1 min, then soy sauce & noodles.Cook 2 min to mix well, sprinkle sesame oil & spring onions over top.

Pork Tomato Sauce for Noodles

Serves 4

1 ½ tab oil
3 tab garlic coarsely chopped
1 tab root ginger finely chopped
3 tab spring onions finely chopped
2 sm onions thinly sliced
2 red chillies finely chopped
450 g minced pork
2 tsp salt
½ tsp black pepper
1 tab sugar
450g tomatoes, peeled and quartered
300 ml chicken stock
3 tab fish sauce
2 tab light soy sauce

coriander leaves to garnish

Heat wok, add oil, when very hot add garlic, ginger, spring onions, onions and chillies.Stir-fry 2 min.Add pork, stir-fry 5 min until cooked.Add salt, pepper, sugar and tomatoes.Add stock and sauces, bring to a simmer and cook 15 min.

Serve with coriander as sauce for noodles.
