Individual choc-mint cheesecakes 250gm low fat smooth ricotta cheese,2TBS splenda arificial sweetener,1/2c extra light sour cream,1/4 c diet chocolate topping, 1 1/2 tsp gelatine combined with 2 tbs hot water,6 arnottsmint slice biscuits. line a deep 6 hole muffin pan with plastic wrap,In a medium mixing bowl beat the ricotta cheese, splenda, sour cream and topping. Stir in the combined gelatine and water
Pour 6 equal amounts of the mixureinto the prepared muffin tine and top each with a Mint Slice biscuit Cover with foil and refrigerate for 2-3 hours or until set.invert onto serving plates and top the fresh raspberries if desired1 cup equals 1 point.This is from the simply the best bookis this the one I will keep looking if it isnt

sorry its not but this one looks good. it did have ricotta cheese in it you used frozen raspberries in it
