".The key to pork crackling is to dry the skin well before sprinkling with salt. Blast the pork in a hot oven to start with so it gets crunchy, then slow cook it for a further hour in a bath of milk. Which makes it really moist and tender."

Pork cooked in milk is a traditional Italian dish "maiale al latte".She didn't invent it.

She might have a taken her recipe ideas from regions of Northern Italywhere this is a classic way of cooking pork.As they slowly cook together they are transformed. The pork acquires a delicate texture as the milk disappears replaced by clusters of a nutty sauce.

My Mr loves baconbits cooked in milk, because he was bought up on it, its another way of using up those bits. lol. I cook him thick bacon ends in the C/pot and serve them with a cheese, onion, and parsley sauce over it with crusty bread and he loves it. Get them on special and they are a cheap meal.Annabel's pork belly done in milk is beautiful and tender.
