Ingredients 2 x 250g pkts baby red capsicums, stems removed, halved, seeded 100ml extra virgin olive oil 8 slices crusty Italian bread, toasted, cooled 2 Lebanese cucumbers, peeled, coarsely chopped 1/4 small red onion, thinly sliced 1/2 cup fresh basil leaves, torn 2 tbs red wine vinegar 1 tbs water Method Preheat a barbecue grill or chargrill on medium. Place the capsicum and 2 teaspoons of the oil in a bowl. Toss to coat. Cook on grill, turning occasionally, for 12 minutes or until soft and the skins start to wrinkle. Set aside to cool slightly. Coarsely chop. Tear the bread into bite-sized pieces. Place the bread, capsicum, cucumber, onion and basil in a serving bowl. Combine the vinegar and remaining oil in a small bowl. Drizzle over the salad and season with salt and pepper. Drizzle over the water. Toss until well combined.

Grilled zucchini with caprese salad and rocket salsa
Ingredients 4 zucchini, very thinly sliced lengthways 1 tbs extra virgin olive oil 4 vine-ripened tomatoes, seeds removed, chopped 2 x 120g buffalo mozzarella balls, drained, chopped (see Notes) 1/2 cup basil leaves Rocket salsa 1 cup rocket leaves, stems removed 1 cup flat-leaf parsley leaves 1 garlic clove, finely chopped 1 tbs tiny salted capers, rinsed, drained (see Notes) 1 tbs red wine vinegar 1/4 cup (60ml) extra virgin olive oil
For the rocket salsa, place ingredients in a food processor, season with sea salt and pepper, then process until smooth. Loosen with a little water. Set aside. Preheat chargrill or barbecue to medium-high. Brush zucchini with oil and grill, turning once, for 5 minutes until lightly charred. Arrange zucchini on plates and top with tomato and mozzarella. Season, then drizzle with rocket salsa. Top with basil leaves.

Ingredients 4 vine ripened tomatoes 4 bocconcini, sliced 1/4 cup torn basil leaves salt and cracked black pepper extra virgin olive oil, to serve balsamic vinegar, to serve
Method Slice each tomato from top to bottom into 1cm thick slices. Place on a serving plate and top with the bocconcini and basil leaves. Sprinkle with salt and pepper. Just before serving, drizzle the salad with oil and vinegar.

Take a whole Italian or Spanish or Greek person . slice finely .
There is NO recipe for ONE Salad that will cover the whole of the Mediterranean .
What are you looking for! Seafood salad green salad vegetable salad meaty salads or what!
You could do a Greek salad which is simply onion, cucumber, tomato and herbs with a bit of feta and olives and dressed with olive oil, salt, pepper and a bit of vinegar.

Thankyou ' uli ' ,I was was to start with the usual Greek Salad,as you printed at the bottom of your message.As I am interested in meat,seafood and vegetables as well,I would glady receive any recipe,that has these included.Much aprreciated.
