Marshmallow Shortcake
125g butter, 125g sugar, 1/2tsp vanilla essence, 1 egg, 225g flour, 1tsp baking powder. cream butter & sugar, add essence,add egg, then sifted dry ingred. Roll out to about 12mm thick. Place on cold tray bake 30mins at 180.
Jelly Marshmallow topping
1 pkt jelly soak in 1 1/2C water for 10 mins then boil for 8 mins. When cool add 1C icing sugar & beat till thick & stiff. Spread on cold base. Sprinkle with coconut or ice.
Or
2dsp gelatine, 1 cup cold water, 1 cup sugar, 1 egg white, 1 cup icing sugar.
soften gelatine in cold water add sugar boil 8 mins. cool. beat white of egg stiff, fold in icing sugar, then slowly pour cooled gelatine. beat until white and thick. Spread on cold shortcake immediately. ice with choc icing, sprinkle with coconut.

Marshmallow Slice
1 pkt crushed wine biscuits, 1/2 tin condensed milk, 1 cup coconut, 115g butter.
Melt butter and condensed milk over very low heat stirring constantly, mix in coconut and biscuits and press into 8cm tin.
MARSHMALLOW:
Dissolve 1 dsp gelatine in 1/2 cup boiling water and add 1 cup sugar.
Beat until white and thick and pour over mixture.
or use the jelly topping as above
Sprinkle with coconut or choc chips.

125g butter, = half cup 125g sugar, = half cup 1/2tsp vanilla essence, 1 egg, 225g flour, = 1 & 4 fifths of a cup 1tsp baking powder.
