Does anyone have the Alison Holst recipe for bran muffins with grated carrot. I remember some of the ingredients were golden syrup, plain flour, wheat bran, grated carrot, baking soda, cream of tartar, butter, milk, brown sugar but can't remember the quantities. Lost my recipe books in the EQ and really feel like making some bran muffins now as they were always light, moist and delicious.

Carrot and bran muffins 1/2 cup golden syrup 50gm butter 1 egg 1 1/2 cups grated carrot 1/2 cup milk 1 cup wholemeal flour 1 cup bran 1 TBsp cinnamon 1/2 tsp salt 1 tsp baking powder 3/4 tsp baking soda Heat golden syrup and butter together until butter has melted, then remove from the heat.With a fork, beat in the egg, then add the carrot, which has been grated finely, then packed quite firmly into the measure, but not pressed down.Stir to mix well, then add the milk. In a bowl large enough to hold the whole mixture, measure the flour and bran. Stand a fine sieve in the bowl and measure the cinnamon, salt, baking powder and baking soda into it, before shaking them into the flour mixture, now mix all these dry ingredients together with your fingers. Stir all the liquid ingredients together again, then tip them all at once into the bowl of dry mixture.Fold them together just enough to dampen the flour. Spoon into muffin tins Bake 200 for about 20 mins. Leave 3 minutes before pressing down lightly, twisting each one to come out easily.
