Cream butter, sugar and vanilla essence together, add egg, then mix in dry ingredients. Roll teaspoonfuls of mixture into balls. Put onto greased trays and flatten with a fork . {tip, I flatten biscuits using a rounded bottom glass, lightly dusted in flour. It makes the biscuits a more even shape: no cracked edges.}
Bake 15-20 mins at 190 deg

Apricot. Almond & Choc Chip Cookies - (makes 18 cookies)
75g melted butter 1/2 cup white sugar 1/2 cup brown sugar 1 cup SR flour 1 teasp baking soda 1/2 teasp salt 1 teasp vanilla 1 egg beaten 1/4 cup each chopped apricots, chopped almonds and choc chips
Beat sugars into butter, add egg and beat.Add flour & soda with fruit, nuts & choc chips & vanilla. Mix well and put spoonfuls onto lined baking tray, bake @ 180C for 12-15 minutes.Cool on tray,
I half the amount of sugar as find amount given is too sweet for our taste. I also ring the changes with peanuts and raisins in place of apricots & almonds.

I make a similar recipe as Sarah, but slightly different. 250g unsalted butter, softened 3/4 cup brown sugar 1/2 cup castor sugar 1 teaspoon vanilla essence 1 egg 2 cups of unbleached plain flour 1 teaspoon baking soda 1/2 teaspoon salt 1 1/2 cups chocolate chips Cream butter, sugars and ess. Beat in egg. Add sifted dry ingreds with chocolate. Bake 180C for 12 mins.
