CRACKERS:
An Alison Holst food processor recipe:
Put the metal chopping blade in the food processor bowl. Add 2cups flour, 1 & 1/2 tsp baking powder, 1 tsp salt, and 50gms very cold butter chopped into small cubes. Add 1 or more of the optional ingredients listed below if you want. Whizz together, then add about 1/2 a cup of cold water in a thin stream through the spout, stopping when the dough particles will only just stick together to form a ball. Roll out very thinly on a lightly floured surface, then cut into squares or rectangles, or other shapes using biscuit cutters. Pile dough scraps together, roll out and cut more shapes until the dough is used. Bake at 190°C for 10-15 minutes until they are a pale golden colour. Leave to cool, and store in an airtight tin.
Optional ingredients:
1/4 cup toasted sesame seeds. 2 tablespoons grated parmesan cheese. 1 tablespoon poppy seeds. The recipe includes that the crackers taste best several hours after baking as the flavour develops - it also says that they don't usually last that long in the Alison Holst household unless she has found a particularly good hiding place

Other variations can include your choice of one or
more of the following: 1/2 to 1 tsp curry powder or 1-2 tsps chicken or other stock powder - leave out salt if using stock powder. 1/2 cup toasted sunflower seeds. 1/4 cup ground almonds. Add 1 to 3 tsp of your favorite pesto. Add 1-2 tsps or to taste of chopped fresh or dried herbs - basil, parsley, mint, thyme, lemon thyme, sage, etc. You could also use some whole meal or wholegrain flour instead of 1/2 a cup or more of the white flour. Add some wheat germ, or cornmeal, etc. too. increasing the baking powder by 1/2 tsp for each 3/4 cup of grains, etc. You can change the ingredients to suit your taste - this is delicious. change 1/2 cup white flour to 1/2 cup whole meal flour, and add 1/2 tsp extra baking powder plus 1/4 cup fine or medium ground cornmeal, 1/4 cup sesame or sunflower seeds, 1/4 cup wheat germ & a little extra salt to taste if needed. Make and bake as above

CRAZY CAKE - ALISON HOLST

This easy school holiday cake is made without eggs, butter, milk or an eggbeater! Its surprisingly good texture and interesting flavour make it well worth trying.

Makes a 20cm square cake.
Ingredients

1½ cups standard (plain) flour
2 Tbsp cocoa
1 tsp each cinnamon and powdered ginger
1 tsp baking soda
1 tsp salt
1 cup sugar
½ cup oil
¾ cup water
2 Tbsp vinegar
1 tsp vanilla essence

Method

Heat oven to 190°C (180°C fanbake), with the rack just below the middle. Line the bottom and two opposite sides of a 20cm square pan with baking paper. Butter and flour the uncovered sides of the pan, or coat with non-stick spray.

Sift the first six ingredients through a sieve over a fairly large bowl. Stir in the sugar with a fork, leaving a depression in the centre. Measure the oil and add it to the dry ingredients, without stirring. Add the vinegar and vanilla to the measured water, then tip them into the flour-oil mixture. Stir with the fork until the mixture is smooth and no dry lumps remain.

Pour the mixture into the prepared pan and bake for 30 - 40 minutes, until the centre of the cake springs back when pressed, and a toothpick or skewer comes out clean. Leave cake in the pan for five minutes, then turn out onto a wire rack and leave to cool. Dust with sieved icing sugar. Serve cut in squares for dessert. Top with whipped cream and fresh or partly thawed raspberries; sliced drained canned peaches; or sliced bananas and raspberry jam.

Pikelets are a classic for kids to make and enjoy.
Easy scones (the lemonade ones are great for the little ones to manage).

supercook, Apr 11, 4:49am
Buy some sweet pastry roll it out the kids can cut shapes with cookie cutters. Bake and then decorate with icing and sprinkles. Easy Jam tarts
use same sweet pastry cut out put in little swallow patty tins and put a spoonful of jam, with scraps leftover I like to put little stars on the top or lattice top.

Everyone loves chocolate crackles :D

purplegoanna, Apr 11, 7:06am
my all time easyiest tip is make up all sorts of diff colours of icing, buy all sprinkles and hail you can find, let them use pipettes to drizzle the icing in patterns onto plain ole vanilla wine bikkies.keeps my step-g-daugter entertained for hours and she loves going home with her box of coloured bikkys.
