Red Velvet Cupcakes

Makes 12

Oven: 170c fan forced

60g unsalted butter
150g castor sugar
1 egg

10g cocoa powder
20ml pillar box red food colour
½ tsp vanilla

120ml buttermilk

150g plain flour
½ tsp salt

½ tsp bi carb soda
1 ½ tsp white vinegar

Cream butter and sugar till light and fluffy in a mixer with paddle attachment.

Add egg and beat it in well

Mix cocoa with food colour, red colour and vanilla into a smooth paste. Add to the sugar/butter mixture and combine till smooth.

Add flour alternating with butter milk to the mixture on slow speed till all combined.

Mix salt, bi carb and vinegar and add to the mixture. It bubbles up so use a biggish bowl.

Mix till all well combined and no lumps.

Scoop into cupcake paper and bake for 20 – 25 minutes. Ice with Vanilla cream cheese icing.

Vanilla Cream Cheese Icing

500g soft cream cheese.
1 ½ cup castor sugar
250g unsalted butter
1 – 2 tsp vanilla

Beat cream cheese and sugar till smooth and fluffy. Add butter and vanilla and beat for 5 minutes. Enough icing for 2 – 3 doz cup

Raspberry Red Velvet Cakes - With Cream Cheese & White Choc Icing!

2 1/2 cups flour
1 1/2 cups sugar
1 tsp baking soda
1 tsp salt
1 1/12 cups vege oil
1 cup butter milk
2 large eggs
2 Tbsp Red food colouring
1 Tbsp Raspberry Esscence
1 tsp white vinegar
1 tsp vanilla esscence

heat oven to 180
put flour, sugar, soda, salt in bowl. Combine.
In a mixer bowl put, oil, buttermilk, eggs, colouring, esscences, vinegar and beat untill well mixed.
Add wet ingredients to dry, mix to combine.
2/3rds fill cupcases and bake for approx 20 - 25mins.

Icing
1 tub cream cheese (250g)
beat with 1 Tbsp soft butter untill smooth.
Gradually add 21/2 - 3 cups icing sugar while still beating.
When all smooth add 1 - 2 cups of melted white chocolate.
Once your cakes are iced, leave in fridge for icing to firm up.

Its medowfresh by the boxed custards in supermarket. 1 box is 500g so (dam it lol) you have enough for 2 batched of cupcakes.

You can freeze any buttermilk you dont use, although it usually has quite a long expiry date.

I have these in the oven as we speak. I will decorate them with little red hearts and sneak them into my hubbies and childrens lunch boxes tomorrow with a wee love note.

You can add lemon juice to milk to make butter milk very easy

hehe I made some of these today - without the vinegar as had none and forgot to get too - delicious with the cream cheese icing and put little valentines heart candy things ontop :)

Don't use dutch chocolate. Use wollies brand chocolate for Pams brand. You need to use cocoa powder that is not Dutch processed.

made these last night for V day used youghurt instead of butter milk, & hansels food colouring instead of the flash stuff and iced them with butter cream icing instead of cream cheese ising, and they were the bomb
