I am after a Greek salad recipe from him.He wrote an article on budget entertaining and this salad was served with roasted potatoes and lamb.Ingredients were olive oil, lemon juice, coriander, feta, cucumber, tomatoes and red onion.Can anyone help with the recipe and/or quantities!TIA

It's not Ray McVinnie, but I make greek salad alot.I don't measure anything and just go with what "looks right".

I did a bit of a Google search and two separate links to what looked like it came up with file not found.I wonder if someone might have it in one of his recipe books.

1/2 cucumber seeded and diced, 3 large tomatoes seeded and diced, 1 small red onion diced, juice of 1 lemon, 1/4 cup coriander finely chopped, 1/4 cup mint finely chopped, 2 tablespoons olive oil, 100g feta finely chopped.Combine all and serve.YUMMMMMMMM
