evebee, Apr 2, 9:34pm

Evebee you have three threads started, one has some replies

You can just mix anything through it. I normally use roasted pine nuts and sometimes cashews, chopped kalamata olives, halved cherry tomatoes crumbled feta and chopped fresh herbs like oregano. Then dressed with a light vinaigrette salt and pepper.

evebee - have you read any of the threads that we bumped up for you?

There are many different recipes for risoni salads in there.

I make a rissoni salad with toasted pine nuts, cherry toms, baby spinach leaves, chorizo and basil pesto/dip stirred through. It's really good and sooooo easy.

thanks for all the recipes. Made one with red and green peppers and basil and olives--very simple but a real hit--will definitely make risoni salads again for bbq's.

I cooked the risoni and left it to cool down and now it is one huge LUMP. How do I get it not to stick together whilst it is cooling down - shake olive oil through it perhaps?

cookessentials, Apr 8, 6:53pm
I always put a ittle olive oil into the cooking water. I also rinse it once it is cooked as the starch that comes out of the pasta makes it go gluggy

ferita, Apr 8, 6:56pm
Cool it quickly in running cold water and then mix some oil through it

Cheers folks, will cook up another batch today using your ideas :)

I'm a year late, but I just made this tonight and it is phnaemeonl! I didn't happen to have any black bean and garlic sauce, so I substituted plain fermented black beans, some mirin and some fresh chopped garlic. (yes, I had fermented black beans on hand. Who doesn't?)It's absolutely wonderful and exactly what I wanted it to be! Thank you for this recipe!
