ok i am doing a hangi in the crock pot now.cabbage on bottom, vegs, then pork and chicken wrapped in fin foil.on high for 6 hours.if i am doing anything wrong let me know. its my first go at it.

Good on you- you'll be hooked. I put my potatoes on the bottom, then meat- not in tinfoil as I like the meat juices through the veg- then other veg all around the meat packed in as much as I can. Then I would use the cabbage leaves to cover the whole lot. I also cover nwith as much stuffing as I possibly can. Have you read the original thread! I will bump it for you.

Can't find the very original thread but the following post is good-
This is copiedofrom original thread Evening everyone. hangi was fantastic!I blended two recipes I got off the
trade me cooks website. I prepare all the veges (spuds, kumera, pumpkin,
carrots) and put a ring of spuds on the bottom but leave a hole in the
middle. Then sit a whole chicken (or what ever type of meat you fancy) on
top of the spuds so its not sitting directly on the bottom. I then put all
the rest of the veges packed around the chicken. Then I put some watercress
(to taste, depending on how much you like it) on top of that, then big
cabbage leaves over the whole lot. Lastly I cover everything with stuffing
to create kind of a crust on top. I usually put it on first thing in the
morning on high (lid on) and turn it down to low about 1-2pm. Perfect by
teatime. Had my father in law here today, hes staunch old school Maori and
he loved it!

But I didn't put the crust on-The cabbage leaves were enough
