1 1/2 cups brown rice 1 spring onion - cut small 1 red pepper - cut small 1/2 cup currants 60g roasted cashew nuts (halved) 2 Tblsp sunflower seeds 3 Tblsp chopped parsley
Dressing Mix
4 Tblsp soya sauce 2 Tblsp lemon juice 1/2 cup olive oil (more if needed) 1 clove of crushed garlic
Cook rice - cool
Mix dressing mix with everything.
This can be made the day before.But if you do then leave out the cashew nuts and parsley. This you add before serving.

Rice Salad with Rosemary

6c cooked rice (2 c uncooked) 2/3c extra virgin olive oil large clove garlic sliced 1 ½ tsp chopped rosemary salt & pepper (optional – 1 kg eggplant, capsicums diced and cooked in oil, capers, olives)
Simmer oil & garlic until garlic golden, discard garlic.Add rice and seasonings, stir until warm and oil absorbed.
Serve at room temperature.

Mandarin and pineapple white rice salad. This is a fairly plain recipe, but looks quite effective with the added colours, you can use your imagination andmix and add your own extra flavours or veges. 3 cups cooked rice (chilled) 3/4 cup pineapple pieces 1 can mandarin segments 1 cup chopped celery few chopped spring onions, or thinly sliced red onion. finely chopped red pepper. finely sliced radishes *you can add variations like chopped cucumber instead of the celery, extra yellow and green capsicums* a few pine nuts to garnish etc* Put all ingredients except the mandarins into a bowl and gently toss thru the dressing.(adding just enough dressing to dampen the rice.) gently stir the mandarin pieces thru the salad just before serving to avoid crushing the segments. Dressing: 1/4 cup mayonnaise 1 TBSP mandarin juice 1 TBSP cider vinegar. *serve the saladwell chilled.*

Corn and Rice Salad 1 Tblesp oil 4 spring onions, chopped 1 small red capsicum, chopped 2 cups corn kernels (I use frozen) 3 tsp curry powder 1/2 cup cashew nuts 1/2 cup French Dressing 3 cups cooked rice
Heat oil in large saucepan, add spring onions and capsicum.Cook 2 - 3 minutes until soft.Add curry powder and cook 1 minute.Add cooked rice and corn, stir to combine and heat through.Stir in cashews and french dressing.Great hot or cold.

Here ya go mattdylan The famous Brown Rice Salad. 1 cup brown rice, 1/4 cup soy sauce, 1/2 onion finely chopped. Cook the rice& when cooked & still hot add the soy sauce and finely chopped onions let cool (a couple of hours preferably overnight) Add the following ~ 1 red pepper chopped 1/2 cup roasted peanuts chopped 1/2 cup each of roasted sunflower and pumpkin seeds and sultanas. Dressing: 1/4 cup olive oil 2 tbsp lemon juice 1 tsp grated lemon rind 1 clove garlic crushed 1 tsp fresh ginger 1 tsp honey pinch of salt. Mix and pour over salad. This is the best rice salad and everyone that eats it when I make it asks for the recipe!Yay for Toadie!
