Im wanting to use apple and ginger together in something extra specially nice, some kind of desert or cake or something.

Try this cakey pudding (I only have it in Imperial measurements, sorry):
Dale's Ginger Binge
Butter a round, deep cake tin or casserole.
Put stewed apple (or sliced pears) in the bottom to a depth of a couple of centimetres. Make the cake batter: 4 oz butter 3 oz caster sugar 2 eggs 1 tbs golden syrup 6 oz self-raising flour 1 tsp ground ginger 1 tbs favourite marmalade (I use orange) handful of chopped crystallised ginger
Cream the butter and sugar. Beat in eggs, then golden syrup and marmalade. Add sifted dry ingredients. Add milk. Lastly add chopped ginger. Spoon over the apple and smoothe the top.
Bake about 50 minutes at 180C.
Also makes a nice cake with lemon icing if you leave out the apple.

Fruit sponge topping, with a tbsp ginger added, you could do a caramelised ginger sauce as well,(made with condensed milk, golden syrup and add ginger to taste) serve with freshly whipped cream at the side. You could do an upside down apple/ginger steam pudding? There are lots of these recipes around on search, including microwave ones.

Basic Muffin Mix Bowl 1 4 tsp BP 2 C flour 3/4 C Sugar Bowl 2 1/2 C Oil 1 C Milk 1 egg Add bowl 1 to bowl 2. Just mix. 200 for approx 15 mins Add cocoa, friut etc as you wish:)
Add apple and chopped crystialized ginger to this.

Ginger Loaf 50g Butter 3 Tspn Golden Syrup 1/2 C Sugar 1/2 C Boiling Water 1 Egg 2 tspn Ginger 1/4 tspn BS 1/2 tspn BP 1 C Flour Place butter, sugar, golden syrup and boiling water in a bowl and stir until melted. Add egg and whisk briskly (I let it cool down a bit first!) Add dry and mix. Place in loaf tin. 30 mins approx at 180 If you love ginger, add some chopped crystallized ginger. Great with chopped apple and or sultanas also.

For Dale's Ginger Binge, how do you get it out of the casserole dish? Do you turn it upside down, so the apples would be on top?
Whatever I make needs to be transferrable, to take to friends place.
Apple and ginger muffins sound nice - do you have a nice recipe you could recommend Wheelz?
