I bought some at the supermarket. I know I can make it myself, but I wanted to try the Naked Locals asparagus and spinach soup.

yep, has got very cold, but lamb casserole on the menu here and soup, bacon hock and vege tomorrow.

just gobbled down homemade curried carrot soup.

LEEK & POTATO SOUP - with extra 'zing' ;)

Clean one large or 2 small leeks, slice leek thinly and grate 1 clove of garlic

Melt 2 Tablespoons butter OR oil on low heat and add leeks & garlic

'Sweat' on low heat for 10 minutes, making sure they don't brown

Peel 2 medium to large potatoes and cut into small dice-sized cubes

Add potatoes to pot with 4 cups water & 1 'Massel' vege stock cube*, 1/2 teaspoon salt & a good grind of pepper

For extra 'zing' add 1/4 teaspoon cayenne pepper

Bring to boil, turn down heat and cook 15 -17 minutes and when soft, mash down just a little

Add a little milk to thin it and serve with a sprinkling of chopped chives for garnish

*Note: 'Massel' is an Australian brand that makes preservative-free vegetable stock cubes...useful for when you don't have your own vegetable stock on hand

neck chops here, yummmmmy. I cooked them in my pressure cooker, lots of veg sort o like a meaty soup.

elliehen, leek and potato is a fave in this house. I add a few carrots to mine. A touch of garlic and cayenne sounds delish!
