Bran and apple muffin recipes please?

Hi everyone, im looking for a apple and bran muffin recipe without the wheat germ in it, can anybody help? Im a young mum with only the basic ingredients. Alos any other quick and easy recipes a 3 year oldd would love. thanks

Hi Lucas.. apart from the recipes here that you can find through the search bar on the left of your screen, there's a great bran muffin recipe on the back of the bran packet..

For any recipe, if there's wheat-germ included and you don't want to use it, replace with the same quantity of extra bran, or use any other grain - rolled oats, rolled rye, rolled millet, etc..

Bran muffin recipes are great as you can change the recipe easily every time, using what you have.. ie.. add another grain as above, add some dried fruit.. any kind, add coconut, cocoa, coffee.. etc..etc..

I always add a mashed banana or an equivalent amount of chopped cooked peaches, apricot's, plums, etc..etc.. - sometimes a little extra flour is needed, so add it to get the right mix. Adding fruit like this will give a lovely moist muffin.

A grated apple, persimmon or pear, can be added, or use grated carrot, courgette/zucchini, etc..

You can also add essences.. coconut, vanilla, etc..

Fibre Muffins
BOWL 1
1/2 C Sugar
1 Tbspn BP
1 1/4 C Flour
Mix.
BOWL 2
2 C All Bran
1 1/4 Skim Milk/Milk
Stand 5 mins
add to bowl 2
1/2 C Apple Sauce
1 Egg
Mix.
Add bowl 1 to bowl 2 and just mix.
Spoon into muffin trays.
Bake 20 mins at 200
You can add spices, dried fruits etc or even chopped apple, pears to this.

PORRIDGE MUFFINS
BOWL 1
1/2 C Oil
1 Grated Apple
2 Eggs
1 C Cooked Porridge
1/2 C Sultanas
1/2 C Coconut
1 tspn Van Ess
Mix till no lumps.
BOWL 2
1 C Flour
2/3 C Brown Sugar
1 tspn BP
1 tspn BS
1 tspn Cinnamon
Mix well.
Add Bowl 2 to bowl 1 and just mix.
Spoon into muffin tins.
Bake 15 mins at 180

withthese, I have a container/shaker, which has sugar and Cinnamon mixed so I can sprinkle the tops before baking:)

thanks for the recipes just made the basic bran muffins and instead of the wheat germ added half cup of stewed apple and 1/2 cuop oats and its beautifal. thanks juliewn. and thanks lx4000 for some ideas will have another go later in the week, once the others are all finsihed
