Cant find my edmonds book, its vanished! Can anyone give me a gooseberry shortcake recipe please ( not with store bought pastry) thanks :) I thought of using just a apple shortcake recipe but Im not sure how togo about the gooseberry part!

If you have fresh or frozen gooseberries use a knob of butter and cook gooseberries gently in their own juice (there will be plenty), and they won't take lonk to cook.Add sugar to taste.

225gr flour 125gr butter 1tsp b/powder 1 egg 1 dessertspoon sugar gooseberries Rub butter into sifted flour, add b/powder. Beat egg & sugar until thick, mix into flour to make a light paste.. Cut in half. Roll out 1 piece & place on a cold greased tray. Cover with gooseberries,sprinkle with a little sugar. Place other half on top, close edges & bake 20 - 30 mins @ 200. Sprinkle with icing sugar before serving.
