findit1, Jun 20, 3:05am
I brought this book, but ended up giving it away to someone travelling overseas without ripping out recipe.
Can anyone supply me with Allyson Gofton Slow recipe.
Would be much appreciated.
thanks

Is this it

300 grams pork pieces
1/2 tblsp oil
1 onion, peeled and sliced
2 tblsp Thai red curry paste
2 tblsp tomato paste
400 ml can coconut cream
400 grams golden kumara, peeled and cut into 3cm pieces
400 grams waxy potatoes, peeled and cut into 2cm pieces
salt and pepper
2-3 tblsp freshly chopped coriander
2 tomatoes, quartered, optional

Method

1. Brown the pork pieces in the oil in a frying pan until golden and set aside.

2. Pan fry the onion in the residue oil until tender, stir in the curry paste and tomato paste and cook for 1-2 minutes.

3. Cut the kumara and potatoes into 3cm pieces and add to the pan with the coconut cream and pork.

4. Bring to the boil, reduce the heat and simmer gently for about 20 minutes or until the kumara and potatoes are tender. Season with salt and pepper and stir in the coriander. If wished add the tomato quarters just before serving
