Would you be keen on tempura batter! it is very light and crisp.

1 egg; 1 cup icy cold water or crushed ice;3/4 cup of plain flour and a pinch of baking soda.

Beat egg and water together until light and fluffy. Add flour and baking soda to the egg mix and mix together quickly. Do not over mix. The mixture should be very thin. Just add some more ice water to mix if needed. Make sure your oil is very hot also.

Grandma's recipe:- 1 Cup flour, 1 teaspoon baking soda, 1 teaspoon vinegar. Mix to required thickness with water or milk.

mines the same as above - i use milk not waterto mix it - i am 77 and this was my poppas recipe!let it stand covered for a while till you see bubbles forming, he used to use hot smoking lard for his fish cooking but guess that is a no no in to-days world! i use grape seed oil for all my frying. no smell and high flash point.

Make a flour and water batter and let it ferment. Better than any beer batter.
