Corn bread

I tried to make it because it is such a favourite the world over and it came out good. Though I was surprised by the blandness so I may have missed what the excitement is about. Do you make it!

I used the following recipe and served it with apricot chicken and green salad.

I make it using the gritty coarse-ground cornmeal. In the US it often accompanies chilli dishes.

It is used in place of yeast wheat breads.which can also be bland.

Corn bread is indeed bland. It is most often eaten with something that has some spicy sauce to make it more tasty.

Ok, I get it. We don't normally eat highly spiced or hot food but it was a good experiment.

Yes, I make it. It's just another bread alternative. I just used Google to search for a recipe, was looking for a more savoury recipe rather than a sweet loaf. Most of the recipes had a lot of sugar in it, so I just left out the sugar, or just added a token one tablespoonful of sugar. Also, some of the recipes used buttermilk, but I chose a recipe that used milk instead.

There are some recipes which add cheese, whole corn kernels and jalapenos to the recipe, for variations.
