Fine if you want to created a toasted sandwich pancake, not an aebelskiver. Many Dutch people buy the aebelskiver because it is a traditional treat from home, I dont think they could be convinced to use a toasted sandwich maker LOL.

I have a cast iron one I bought in Holland in 1988. It sits in the cupboard still wrapped in the original newspaper I used the first time. Each time I use it, I just flick off any stuck bits when I'm done and wrap it back up again. It's great. My kids will tesify to that.

lol,
then they wouldn't be up for a pikelet mixture. Pikelet mixture cooks very well in the sandwich maker.I would not cook the original recipe in a sandwich maker. No comparison, is there.

One of the things about poffertjes made like they do in homes and markets all over Holland, is that although the 'holes' in the pan are small, you do put oil in them so it is a little like shallow frying in a way. Hard to describe but that's what gives the nice crunchy outside. If you don't want the oil then you can cut it back. That's also why the cast iron ones do so well because they can handle the heat.

I will when I find the Edmonds book! It's the pikelet recipe from there. When I say modified, it's because I don't follow the recipe to the exact. I think if you use that recipe you might need to 'milk' it down a touch and then use the squirty bottle to get it into the 'holes' in the pan. I have a pan that is cast iron with three circles of holes and one 'hole' in the middle. If you know what I mean! (This is hard :)) I pour some oil into the centre 'hole' to heat and using a round paint brush I paint a fair amount of oil from there into each 'hole' Then squirt in the mix and turn with a skewer when the bottom is cooked. Then take out of the pan when that side is cooked. ( I am sure this will not make sense in the morning but it does to me right now!) This is what my pan looks like (know nothing about the site, just using the photo) http://www.poffertjes.com.au/menu.htm
Is that helpful!

PS I doubt that many Dutch people use the yeast recipe anymore. As for pancakes here, you can buy a 'mix' or most people just use the basic flour/ baking powder/milk recipe.
