Ice-Cream Cake 175g butter or margarine, 3 c Choc biscuit crumbs such as choc ripple, 1/3 c brown sugar packed, 2litres Choc ice cream softened, 2 litres Strawberry ice cream softened and 500ml sweetened whipped cream. Melt butter or margarine in saucepan, stir in biscuit crumbs and brown sugar. Divide into thirds. Press 1/3 of crumbs in bottom of ungreased 23cm springform tin. Spoon choc ice cream over crumb layer. Sprinkle with another 1/3 of crumbs, press lightly and freeze. Then spoon strawberry ice cream over crumb layer, sprinkle with remaining crumbs, press lightly, freeze. When frozen, thaw for about 10 minutes, run knife around tin to loosen side. Spread top with whipped cream. Freeze. When ready to serve one could add say a few strawberries cut into halves, cut side down and then add some choc shavings as decoration.

Pumpkin Chip Cake.Very moist with a choc touch. 4 large eggs, 2 c sugar, 400g drained mashed pumpkin, ¾ c cooking oil, 2 c flour, 2 tsp baking powder, 1 tsp baking soda, 2 tsp ground cinnamon, ¾ tsp salt, ¼ c sifted cocoa, 1 c choc chips and a choc whipped topping (recipe in next post).

Beat eggs until frothy, beat in sugar. Add pumpkin and oil, beat. Stir next six ingredients in separate bowl, then add pumpkin mix until moistened. Spoon ½ batter into greased & floured 23cm hollowed centre round baking tin or bundt tin. Sprinkle with half of choc chips, spoon remaining batter over top. Sprinkle with remaining choc chips. Bake in 175c oven for about 65 – 70 minutes. A wooden skewer inserted in centre should come out clean. Let stand for 30 minutes before turning out on rack to cool. Spread whole of cake top and sides with topping. One could decorate top with more choc chips.

Chocolate Whipped Topping A light brown fluffy topping, not too sweet but goes great with the above pumpkin cake. 1 cup choc chips, 2 cups cream, 2tbsp sugar, 1 cup milk and 1 tsp vanilla essence.

Melt choc chips in saucepan over hot water or on very low heat stirring constantly until smooth, do not overheat. Cool to room temperature. Beat cream, sugar, milk and vanilla in medium bowl until stiff. Add cooled choc, beat to combine. Enough to ice top and sides of a 2 layer cake.

Chocolate Date Cake with a sugared nut & chip top 1 ½ c boiling water, 1 c chopped dates, 1tsp baking soda, ¾ c butter or margarine softened, 1 c sugar, 1 large egg, 1tsp vanilla essence, 2 c flour, 1 tbsp sifted cocoa, 2tsp baking powder, ½ tsp salt, ¼ c sugar extra, ¼ c chopped walnuts, ½ c chocolate chips and chocolate cheese icing (recipe post number 145 – page 3).

Pour water over dates & baking soda in bowl, let stand. Cream butter or margarine and first lot of sugar in large bowl. Beat in egg & vanilla essence. Stir flour, cocoa, baking powder and salt in separate bowl. Add flour mixture in 3 additions, alternately with date mixture in 2 additions, beginning and ending with flour mixture to the creamed mixture.Put the batter into a greased and floured 25cm hollow ring tin or flouted bundt tin. Sprinkle with second lot of sugar, walnuts and choc chips. Bake in 175c oven for about 45 minutes. Cool completely before removing cake. Iced sides only with chocolate cheese icing (recipe post number 145). Should cut into 16 wedges.

Chocolate Queen of Puddings 50g choc pieces, 450ml choc flavoured milk, 100g fresh white or wholemeal breadcrumbs, 125g castor sugar, 2 eggs separated and 4 tbsp black cherry jam. Preheat oven 180c. Put choc pieces into saucepan with choc milk. Heat gently, stirring until choc melts. Bring almost to boil, then remove from heat. Put breadcrumbs in large mixing bowl with 25g of the sugar. Pour in the choc milk & mix well. Beat in egg yolks. Spoon into about 1.2 litre ovenproof dish. Bake for 25-30 minutes or until set & firm to touch. Whisk egg whites until soft peaks form, gradually whisk in remaining sugar until one has a glossy thick meringue. Spread the jam over the choc mixture & pile meringue on top. Return to oven for about 15 minutes or until meringue is crisp & golden.

Chocolate Ice Cream Bites… Great for kids. 1 litre of favourite ice cream, 300g dark chocolate and 3 tbsp unsalted butter. Cut ice cream into good size bite cubes. Stick a cocktail stick or small skewer into each ice cream cube and return to freezer until very hard. Place choc & butter in heatproof bowl over simmering hot water until all has melted and stirred until smooth. Quickly dip each cube fully into warm choc & return to freezer. Keep them there until ready to serve. Simply a neat idea at parties.

Chocolate Rum Pots 205 g chocolate, 4 eggs separated, 6 tbsp castor sugar, 4 tbsp dark rum & 4 tbsp thick cream. To Decorate: whipped cream & some choc shapes or filigrees. Melt choc in bowl over gently simmering water until melted. Leave to cool slightly. Whisk egg yolks with castor sugar until very pale & fluffy. Drizzle melted choc into the whisk mixture & fold in together with rum & cream. Whisk eg whites in a bowl until soft peaks form. Fold egg whites into choc mixture in 2 batches. Divide the mixture among 6 individual dishes & chill in refrigerator for at least 2 hours. To serve, decorate with a little whipped cream & choc shapes or filigrees.

If anyone would like to save the pages of a thread have a page of the thread on your screen. at the top left, click on the word 'File' - then 'Save as' - a box will pop up. type the name of the thread - use the page number too if you want. ie: "Chocolate thread 1" or any other name, in the 'File name' part, and at the top of the box, click on the little down arrow at the right end of the 'Save in" box. A range of options will come up. choose where you want to save the thread to - ie. to your desktop, so you have it readily accessible. Now click on 'save' at the bottom right of the box, and your computer will take a few moments to save that page of the thread (or any internet page you want to save like this) so you have it readily accessible to read through as and when you want. Just go to where you've saved it, and click/double click on the name you've used, and it will open for you. Hope this helps.

Chocolate Brownie with Caramel Cashew Topping In a double boiler add ½ cup butter and 3oz unsweetened chocolate.Melt.

Add 1 c sugar and pinch salt.Let cool for a dew minutes before adding 2 eggs, ¾ cup flour and 1 tsp pure vanilla.Stir all this together and add ¾ cup semi sweet chocolate chunks.
Pour into a greased 8” x 8” foil lined and buttered cake pan.
Bake at 180 for 30 minutes.

Topping
In a double boiler put 40 jersey caramels and ½ cup toasted cashew nuts (chopped) 1 tsp vanilla and a pinch of salt.
Spread over brownie and then chill for about an hour.Cut into squares.
