cheese cakes. pastry.raspberry jam. patty tins Line patty tins with puff pastry. my pastry for custard squares, would be fine to use. Put ## custard squares ## in as your "key word" in the search, on the left of this page. you will find the pastry. Put 1/2 a teaspoon of raspberry jam in the bottom, a good spoon of the cake mix, and a little twist of pastry wrapped around your finger, on top. Bake 15-20 minutes @150%c Cake mixture.cream 125 grams of butter, 125 grams of sugar.add 2 eggs, 1 at a time.then fold in 150 grams of flour, 1 teaspoon of baking powder. This is a nice way of using up pastry you may have left over. enjoy

Trifle ###### first timers If you have never made a trifle before, here is a very simple recipe . Split a trifle sponge in half-----jam both sides, place sliced peaches over one piece, scatter some chopped walnuts over and put the other piece of sponge on top.Cut it into 2 cm squares, scatter into a serving dish and splash over 1/4-1/2 a can of ginger-ale[ do not swamp it, [better to be a little dry, than wet] Pour over custard, using a knife to make holes for the custard to get right into the sponge.leave to set, cover with cling wrap, put in fridge to chill , Smother with whipped cream to serve.If You are up to it, freeze what you may have left and use for New Year.I put up first timers , it is so easy. if you wish you could buy the custard to make this trifle.I always serve jelly separate

peanut butter My recipe for home made peanut butter.no sugar in this lot. Spray 500 grams of skinless peanuts with vege oil, mix about to coat. microwave 3 minutes on high , take out and mix about. microwave 2 minutes on high , take out and spread out to cool , should stop the cooking process. Put the nuts into a blender, mix to grind all the nuts , may have to stop the blender to push some of the nuts down to the blades , continue blending untill they are all of the same consistency. Add 1 tsp of salt , drizzle in 1/4 cup of vege oil. stop the blender to push the dry peanuts down untill it is all nice and moist. This recipe makes a full 500 gram jar , and about 1/4 cup in another, of delicious , home made peanut butter.

Ginger beer.no bug dissolve 4 cups of sugar in 3 liters of hot water, add another 3 liters of cold.add juice of 4 lemons , 2 Tblsp of ground ginger, 1 tsp tartaric acid, stir all together, bottle in plastic bottles, add 2 raisins to each bottle. squeeze the bottle before screwing the lid tight. When the bottle has regained its shape and feels tight, put into the fridge to chill.enjoy

Sponge .sandwich.drops Sponge Beat 4 egg whites untill stiff, slowly add 175 grams of sugar, then 2 Tblsp of boiling water, add 1 tsp of vanilla then the egg yolks one at a time. Sift 175 grams of cornflour, 1 dessp of flour, 1 heaped tsp of baking powder fold into the egg white mixture.Bake for 15 minutes at 190%c. 2 x sponge sandwich tins.enjoy

fudge sauce.chocolate.hot This is yummy, great sauce for profiteroles, ice cream, pavlova topping, fruit salad, trifle, etc.
Melt 1 tin of sweetened condensed milk, 1/2 cup of brown sugar, 2 Tblsp cocoa, 1 tsp vanilla, 75 grams of butter, and 2 cups of sifted icing sugar. Use hot.Very rich, not for everyday use.

bread,. Lrg white. bread maker 4 cups of high grade premium flour, 2 Tablespoons of milk powder,.2 Tablespoons of sugar,.1 teaspoon of salt,.2 Tablespoons of butter,.2 raised teaspoons of sure bake yeast,.350 mils of warm water. I bake this in my bread maker using the 4 hour function. I have made the 3 hour function, it just is not as nice as the 4 hour.

Xmas cake. melt 1 tin of sweetened condensed milk, 125 grams of butter, 2 Tblsp golden syrup. mix in another large bowl, 1 and 1/2 KG of mixed fruit with 2 cups of flour, 1/2 teaspoon each, nutmeg,cinnamon, mixed spice. now add to that bowl the milk - butter mix, 4 beaten eggs, 1/2 teaspoon each almond, lemon, vanilla, rum essences. lastly add 1/4 cup of milk with 1 teaspoon of baking soda added. Bake 3-4 hours at 125 %c I line my tins with corrugated cardboard, newspaper, finally non stick baking paper.

White Xmass melt 250 grams of kremelta, pinch of salt.mix 1 cup each of, coconut, skim milk powder, dried fruit, rice bubbles.add 1/4 cup of chopped walnuts. mix the kremelta in with 1 teaspoon of vanilla. set in your fridge. Enough for a swiss roll tin. enjoy

cup cakes. sultana cakes. 3 doz. cream 250 grams each, of butter, and sugar.add 1/2 teaspoon of vanilla, 4 eggs one at a time, beating well after each egg.sift and add 300 grams of flour, 2 teaspoons baking powder. cup cakes put a dessert spoon of mixture in patty cake cups, bake 10-15 minutes @180%c. sultana cakes. add a handful of sultanas to the above recipe, and bake these in patty cups or sponge drop tins. bake the same as the cup cakes.

Scones. Date. 4 cups of flour, 1 tsp salt, 2 tsp baking soda, 4 tsp cream of tartar, sifted. chop up and add 200grams of dates. melt 100 grams of butter, add 1 egg, beat with whisk, add milk to make up to 2 cups. add to dry ingredients mix. bake 15 minutes in a hot oven.

custard squares 48 5x5cm Custard squares. pastry 3 cups of plain flour, 1 & 1/2 teaspoons of baking powder, 1/2 teaspoon salt, 12 ozs of cold butter, or vegelable fat, chopped up small. mix with 1 & 1/2 cups of milk with 3 teaspoons of vinegar added. roll out to aprox 40 x 80 cm oblong., give 4 or 5 book folds., You can still just see little bits of fat, that is ok., rest in the fridge for 45 minutes. Turn oven on to 220 deg c. roll out 1/2 to completely cover a baking tray, prick well, leave in a cool place resting untill oven is rising to temp. Bake 10 minutes, cool. cook two whole trays of pastry, one at a time. when you take them from the oven put another tray on top and push down. leave to go cold. If your pastry has risen heaps, your pastry could have had another book fold before resting. Have a pencil and paper near by, and use it. A lot of people are put of making pastry, once you have got your eye in, you will never buy pastry again.
Custard. mix 2 cups of sugar, 2 teaspoons of vanilla, 1 & 1/2 cups of corn flour, 1 cup custard powder. mix with liquid taken from 7 cups of milk & 3 cups of water., put remaining milk/water, 2 ozs of butter on to heat. Pour hot liquid into cold to start, cook 3 minutes after it thickens. spread onto pastry while hot, Work quickly so custard dose not skin over, put other pastry on top, may have to smooth out custrd arround the edges a bit. and weigh down with a baking tray to make it all flat, leave to go cold. ice with vanilla icing. Keep in the fridge.

Hi pickles,thanks for posting all the recipes.I had another look at the oven temp for the cheesescakes as it seemed too low to cook the pastry.I checked my Edmonds as the recipe is the same and the temp given there is 200C.
Also,with your pav recipe,do you add all the icing suger at once to the stiffly peaked egg whites,or gradually as one does with caster sugar !

Green tomato and pineapple pickle
2 kg of green tomatoes, cored and chopped smallish 750 grams of chopped onions 2 seeded chili chopped [ not very hot ] 1 green capsicum chopped layered in a stainless steel bowl with a sprinkle of salt over each layer, [4 layers] leave three hours and strain Put the veg into a preserving pan with 3 cups of cider vinegar 500 grams of brown sugar 2 tsp mustard seeds 3 tsp celery seeds 1 & 1/2 tsp curry powder 1 & 1/2 tsp turmeric bring it to a boil and then simmer until the veges are cooked. Add a 425 gram can of crushed pineapple, with the juice Thicken with 3 Tbsp of cornflour 1/2 cup of cider vinegar. Bottle while hot , cover when it is cold.

Muesli bars
We made these before you could even buy muesli bars, sold like hot cakes. Lightly toast 1 cup each of; sesame seeds sunflower seeds coconut cashew nuts add; 1 cup of brown sugar 1 cup of sultanas Heat to a soft ball stage 116 deg c 240 deg f 100 grams of butter 11/4 cup of honey 1/2 cup of brown sugar mix with the dry ingredients and press into a swiss roll tin to set. cut into 20 bars. We would change the sultanas to make them different. ch dry pineapple...ch apricots...ch apricots and slivered almonds[replaced the cashews] dried bananas [popular], these days there are even more options. dried blueberries, cranberries,lots of things we couldn't get back then.

Blackberry cobbler.
Put 25 grams of butter into an oven proof dish, melt in the oven. Put into a basin 1 cup self raising flour 3/4 cup of sugar 1 cup of whole milk Mix into a smooth batter Pour the batter into the dish, sprinkle over about 2 cups of berries, sprinkle over a little sugar, and put 6 knobs of butter on top. Bake 45 minutes at 175-180 deg C It was a nice way of using up my crop of blackberries I have made this using a can of peaches, I put the peaches with the juice in the dish then the batter, knobs of butter on top. no extra sugar. was just as nice.

A B C sauce Tomato sauce as it turned out.. 3 kg ripe tomatoes 1 & 1/2 kg over ripe gala apples [added just to use them up] 1 & 1/2 liters of malt vinegar [my brew] 750 mils of cider vinegar [my brew] 1/2 kg of onions 3 Tbsp crushed garlic [out of a jar] 3 Tbsp plain salt 1 Habanero chili 1 tsp ground cloves 1 tsp ground black pepper 1 tsp ground ginger 1 tsp ground mace 1/2 kg of brown sugar 1/2 jar of jam needed to be used it's as old as I am...
It is hot but not over the top, may need more sugar, but I will wait before adding more until it reduces down. I am simmering all that right now, looking at simmering it for two hours. Did not need the extra sugar. Grand-kids loved it.
