Just wanted to say thank you for your icing sugar pavlova recipe. It is amazing - It was huge and very yummy - its the first time I have made a pav that hasnt sunk in the middle. Fantastic recipe - thank you :):)

7 Seeded bread
I have just cooked a nice loaf. I started it in the bread maker and finished it in my oven. 2 teaspoons of flax seeds soaked in 2 Tbsp boiling water, left to cool. I put into the bread maker 3 cups of flour 1 cup of, seven seed grain mix [pak n save] 2 Tbsp milk powder 1&1/2 tsp salt 2 tsp sugar 2 Tbsp soft butter 1 tsp bread improver 3 tsp dried sure to rise yeast 350 mils of warm water. It is now I put the flax seeds in. Set the bread maker to seeded bread and let it knead and rise once. I then took the dough out, shaped it, put it into the bread tin, oiled the top and left it for 1 hour in the airing cupboard covered with a damp cloth. I baked it @ 220%C for 15 minutes, turned the tin, baked a further 15 minutes, turned the oven down to 180%C for a further 15 minutes. To finish it off I removed the loaf from the tin and gave it 5 minutes so the bottom reached the same colour as the top. It is a very nice loaf, tasty. Looks just like the whole grain bread you buy, just tastes better

plum sauce... . [hot]
6 kg of the plums , 3 liters of vinegar , 1 1/2 kg of brown sugar , 1/4 cup of sea salt , 100 grams of fresh ginger skin on and chopped , 4 good Tblsp crushed garlic , 2 tsp ground mace , or nutmeg 1 tsp cayenne , cut down to 1/2 teaspoon if you want a mild sauce. 5 tsp gr. all spice , 1 Tblsp whole cloves , 1 tsp gr. cloves , 2 tsp gr, ginger , simmered that untill half the volume , approx 4 hours... put it through a mouli , then sieve the stones to get all the flesh , makes it thicker...

Beat until thick and smooth ... ... approx 15 mins 6 egg whites, 3 Cups Icing Sugar, 2 teaspoons Cornflour, 2 teaspoons White Vinegar, add 2 Tablespoons Boiling water... ... ... ... , Pile onto a baking Paper lined oven tray Cook for 5 minutes at 200 degrees C, then turn down and cook a further 1 1/2 hours at 100 degrees C. (Leave in oven to cool)

Cucumber Pickle I use this recipe for all my pickle, I use the equivalent of any other veges, I have on hand. I slice the cucumbers for a change. # 104 recipe is more like the "musto" type pickle. 4 cucumbers 2 green peppers 4 red peppers 4 onions 1/2 cup salt 3 cups sugar 2 cups white vinegar 1 teaspoons mustard seeds 2 teaspoons celery seeds 1/2 teaspoon turmeric 3 tablespoons cornflour
Prepare the cucumbers,green and red peppers and onions, sprinkle with salt for 1 1/2 hours,then drain off liquid. Add vegetables to the sugar,seeds and vinegar mix and bring to the boil. Thicken with cornflour, and a little extra vinegar.
I add a little curry sometimes. Go by taste. A nice pickle will improve on keeping. . enjoy

chilli jam
1 kg of ripe tomato's 200 grams of hot chillies 300 grams of capsicums 800 grams of plums 1/3 cup of water Put onto the stove to simmer and cook add 4 tsp sea salt 2 tsp cayenne 1 tsp mace 2 tsp gr all spice 1 tsp gr. ginger once cooked mouli, put back into the pot, bring back to the boil and add 800 grams of white sugar, boils 10 minutes. Pour into bottles, cork.
This is very sweet, it is extremely hot .

Banana salad
Main meal Slice very ripe bananas, toss in a little lemon, juice. throw in a handful or two coconut ribbons. [ usually a bulk food product. ] Dress with sour cream, loosened with milk.
Dessert If any over from the main add pineapple pieces, marshmallow's, a bit of juice from the pineapple.
Dress with yogurt, for a lighter option.

Finished recipe... . 9 X 750 mil bottles.
8 liters of malt vinegar , 25 grams of whole cloves 2 kg apples , 2 oranges , 2 lemons , 500 grams of garlic , 500 grams of fresh ginger , 110 grams of tamarind puree , 1 near rotten banana , 500 grams of molasses , 25 grams of gr. black pepper , 3 tsp cayenne pepper , 1 kg brown sugar , 225 grams of sea salt. Simmer for three hours , strain through a sieve , then hang the pulp in a cotton cloth to extract all the sauce... . watch for fruit flies... . Bottle , cork , and store in a cool place.
Boil 620 mils of water, 350 grams of butter, add 450 grams of flour, stiring with a wooden spoon cook untill mixture leaves the side of the pot... .cool for 5 minutes... beat in15-16 eggs 1 at a time beating well, after each egg has been added. . should be a stiff mix... eclairs... pipe 6-8cm long ... . bake 20-30 minutes in a hot oven. . do not open the oven door while this mix is cooking. One or two flicks of water onto the trays before baking. cream puffs... pipe Tblsp size lots... . same as eclaires savoury cases... same as cream puffs... . same as eclairs profriteroles... teaspoon lots... . 10 -15 minutes...

Sausage rolls... . 6 dozen pastry::: 4 cups of plain flour, 2 teaspoons of baking powder, 1 teaspoon salt, 500 grams of vegetable fat, [16 ozs], chopped up small. . mix with 2 cups of milk with 4 teaspoons of vinegar added. roll out to approx 40 x 80 cm oblong... , give 4 or 5 book folds. . , You can still just see little bits of fat, that is ok. , rest in the fridge for 45 minutes. Roll out half at a time. I put the sausage meat through a bag fitted with a large nozzle, put a line of sausage meat along the pastry, 3 cm from the edge. Fold the pastry up and over the sausage meat. Water the edge, and fold completely over. Cut the pastry, to separate the roll. Milk cut and bake. Do that again, and if you are lucky , again. Roll the pastry out with this in mind.
Sausage meat ::: 3 x 500 gram, tubes of sausage meat, 1/2 loaf of old bread, [ crusts and all. ] I am not fussed here, may add more. 500 mils of hot water over bread, cool, mix with hands and pour off excess water, if any. 1 teaspoon of salt , 1/2 teaspoon of pepper, 2 good teaspoons of gravox, mix well. If it ends up a bit wet, add a few Tablespoons of whole meal flour. Note , no onion. I rather use the gravox now. cook in a hot oven

Neapolitan cake Buy a trifle sponge, [ Ernest Adams ] good. cook a sheet of puff pastry, prick it well before cooking, put an other tray on top after cooking, cool. Split the cake in half, jam it with raspberry jam, spread that with a layer of mock cream, put pastry on , spread that with cream, spread a layer of jam onto the other bit of sponge put on top. Ice with raspberry icing. Enjoy

Pudding... ... Choc... less sugar. Self saucing, Choc pudding in a basin put 1 cup of flour, 1 tsp baking soda, 2 tsp cream of tartar, 2 Tblsp cocoa, 1/2 cup sultanas... . mix with 1/2 cup of milk, to make a stiff dough. Note No sugar. Pour over, 1 cup of boiling water 2 tsp golden syrup, 1/2 cup of sugar, 50 grams of butter. Steam 30 minutes. serve with custard, a dollop of cream or ice cream. enjoy

Shortbread ... . . Large lot. cream 500 grams of butter with 250 grams of icing sugar 1 tsp vanilla, 1/2 tsp salt. add 750 grams sifted flour in 3 lots. You can roll and cut into shapes, or I prefer to make cylinders of the mix, wrap in glad wrap, chill in fridge, and slice 1cm thick. put on tray and stamp with a floured pototoe masher, leaves a nice pattern. 150 deg c, untill cooked. Nice and keeps well.

cheese cake... ... two. This recipe makes two good sized cakes, would serve 24 easy. crumb base... 1 pkt wine biscuits crushed 150 grams of melted butter. Put into the bottom of two round sponge tins, chill. custard ... . , heat in a double boiler 1 cup of milk, 1 cup of sugar , pinch of salt, grated rind of 1 lemon, 4 egg yolks. till thick, cool. dissolve 2 Tblsp gelatine in 3 Tblsp water, mix into cool custard. cream 450 grams of cream cheese juice of the lemon, add custard and fold in with, 450 mls of whipped cream. set in fridge. Top with cream and anything you fancy. Enjoy.

Put 1/2 a teaspoon of raspberry jam in the bottom, a good spoon of the cake mix, and a little twist of pastry wrapped around your finger, on top. Bake 15-20 minutes @150%c Cake mixture... cream 125 grams of butter, 125 grams of sugar... add 2 eggs, 1 at a time... then fold in 150 grams of flour, 1 teaspoon of baking powder. This is a nice way of using up pastry you may have left over. enjoy

sweet pastry and tin glide great for all cake slices, and tarts cream 450 grams butter, and sugar. add 2 tsp vanilla 4 eggs, 1 at a time. sift and add 900 grams of flour with 4 tsp baking powder and add. Chill pastry well. knead roll and use a quater at a time. This pastry freezes well, raw or cooked.
tin glide melt 4ozs of fat add 1oz of vege oil, stir in 2 ozs flour. mix well. keep out of the fridge, in a cool place. You may need to melt and stir a bit to use.

Trifle ###### first timers If you have never made a trifle before, here is a very simple recipe . Split a trifle sponge in half-----jam both sides, place sliced peaches over one piece, scatter some chopped walnuts over and put the other piece of sponge on top... . Cut it into 2 cm squares, scatter into a serving dish and splash over 1/4-1/2 a can of ginger-ale[ do not swamp it, [better to be a little dry, than wet] Pour over custard, using a knife to make holes for the custard to get right into the sponge... leave to set, cover with cling wrap, put in fridge to chill , Smother with whipped cream to serve... . If You are up to it, freeze what you may have left and use for New Year... I put up first timers , it is so easy... if you wish you could buy the custard to make this trifle... I always serve jelly separate

peanut butter My recipe for home made peanut butter... . . no sugar in this lot... . Spray 500 grams of skinless peanuts with vege oil, mix about to coat... . microwave 3 minutes on high , take out and mix about... . microwave 2 minutes on high , take out and spread out to cool , should stop the cooking process... . Put the nuts into a blender, mix to grind all the nuts , may have to stop the blender to push some of the nuts down to the blades , continue blending untill they are all of the same consistency... . Add 1 tsp of salt , drizzle in 1/4 cup of vege oil... . . stop the blender to push the dry peanuts down untill it is all nice and moist. This recipe makes a full 500 gram jar , and about 1/4 cup in another, of delicious , home made peanut butter... .
