Put 1/2 a teaspoon of raspberry jam in the bottom, a good spoon of the cake mix, and a little twist of pastry wrapped around your finger, on top. Bake 15-20 minutes @150%c Cake mixture...cream 125 grams of butter, 125 grams of sugar...add 2 eggs, 1 at a time...then fold in 150 grams of flour, 1 teaspoon of baking powder. This is a nice way of using up pastry you may have left over. enjoy

sweet pastry and tin glide great for all cake slices, and tarts cream 450 grams butter, and sugar. add 2 tsp vanilla 4 eggs, 1 at a time. sift and add 900 grams of flour with 4 tsp baking powder and add. Chill pastry well. knead roll and use a quater at a time. This pastry freezes well, raw or cooked.
tin glide melt 4ozs of fat add 1oz of vege oil, stir in 2 ozs flour. mix well. keep out of the fridge, in a cool place. You may need to melt and stir a bit to use.

Trifle ###### first timers If you have never made a trifle before, here is a very simple recipe . Split a trifle sponge in half-----jam both sides, place sliced peaches over one piece, scatter some chopped walnuts over and put the other piece of sponge on top....Cut it into 2 cm squares, scatter into a serving dish and splash over 1/4-1/2 a can of ginger-ale[ do not swamp it, [better to be a little dry, than wet] Pour over custard, using a knife to make holes for the custard to get right into the sponge...leave to set, cover with cling wrap, put in fridge to chill , Smother with whipped cream to serve....If You are up to it, freeze what you may have left and use for New Year...I put up first timers , it is so easy... if you wish you could buy the custard to make this trifle...I always serve jelly separate

peanut butter My recipe for home made peanut butter.....no sugar in this lot.... Spray 500 grams of skinless peanuts with vege oil, mix about to coat.... microwave 3 minutes on high , take out and mix about.... microwave 2 minutes on high , take out and spread out to cool , should stop the cooking process.... Put the nuts into a blender, mix to grind all the nuts , may have to stop the blender to push some of the nuts down to the blades , continue blending untill they are all of the same consistency.... Add 1 tsp of salt , drizzle in 1/4 cup of vege oil..... stop the blender to push the dry peanuts down untill it is all nice and moist. This recipe makes a full 500 gram jar , and about 1/4 cup in another, of delicious , home made peanut butter....

meringues... beat 4 egg whites stiff,...slowly add 4 100 grams of castor sugar, beat well........fold in,..... 1 tsp corn flour, 1 tsp lemon juice, 100 grams of castor sugar.....pipe onto baking paper.....bake 2 hours @ 100 % c ...turn the oven off and leave them in the oven, while it cools.

Ginger beer....no bug dissolve 4 cups of sugar in 3 liters of hot water, add another 3 liters of cold...add juice of 4 lemons , 2 Tblsp of ground ginger, 1 tsp tartaric acid, stir all together, bottle in plastic bottles, add 2 raisins to each bottle... squeeze the bottle before screwing the lid tight. When the bottle has regained its shape and feels tight, put into the fridge to chill....enjoy

Sponge ...sandwich...drops Sponge Beat 4 egg whites untill stiff, slowly add 175 grams of sugar, then 2 Tblsp of boiling water, add 1 tsp of vanilla then the egg yolks one at a time... Sift 175 grams of cornflour, 1 dessp of flour, 1 heaped tsp of baking powder fold into the egg white mixture...Bake for 15 minutes at 190%c..... 2 x sponge sandwich tins....enjoy

fudge sauce....chocolate.....hot This is yummy, great sauce for profiteroles, ice cream, pavlova topping, fruit salad, trifle, etc.
Melt 1 tin of sweetened condensed milk, 1/2 cup of brown sugar, 2 Tblsp cocoa, 1 tsp vanilla, 75 grams of butter, and 2 cups of sifted icing sugar. Use hot.....Very rich, not for everyday use.

Xmas cake. melt 1 tin of sweetened condensed milk, 125 grams of butter, 2 Tblsp golden syrup... mix in another large bowl, 1 and 1/2 KG of mixed fruit with 2 cups of flour, 1/2 teaspoon each, nutmeg,cinnamon, mixed spice... now add to that bowl the milk - butter mix, 4 beaten eggs, 1/2 teaspoon each almond, lemon, vanilla, rum essences... lastly add 1/4 cup of milk with 1 teaspoon of baking soda added... Bake 3-4 hours at 125 %c I line my tins with corrugated cardboard, newspaper, finally non stick baking paper.

cup cakes.. sultana cakes. 3 doz. cream 250 grams each, of butter, and sugar......add 1/2 teaspoon of vanilla, 4 eggs one at a time, beating well after each egg....sift and add 300 grams of flour, 2 teaspoons baking powder. cup cakes put a dessert spoon of mixture in patty cake cups, bake 10-15 minutes @180%c.... sultana cakes... add a handful of sultanas to the above recipe, and bake these in patty cups or sponge drop tins... bake the same as the cup cakes...

Scones... Date. 4 cups of flour, 1 tsp salt, 2 tsp baking soda, 4 tsp cream of tartar, sifted. chop up and add 200grams of dates. melt 100 grams of butter, add 1 egg, beat with whisk, add milk to make up to 2 cups. add to dry ingredients mix. bake 15 minutes in a hot oven.

Hi pickles,thanks for posting all the recipes.I had another look at the oven temp for the cheesescakes as it seemed too low to cook the pastry.I checked my Edmonds as the recipe is the same and the temp given there is 200C.
Also,with your pav recipe,do you add all the icing suger at once to the stiffly peaked egg whites,or gradually as one does with caster sugar ?

Sausage rolls.6 dozen pastry::: 4 cups of plain flour, 2 teaspoons of baking powder, 1 teaspoon salt, 500 grams of vegetable fat,[16 ozs], chopped up small. mix with 2 cups of milk with 4 teaspoons of vinegar added. roll out to approx 40 x 80 cm oblong., give 4 or 5 book folds., You can still just see little bits of fat, that is ok., rest in the fridge for 45 minutes. Roll out half at a time. I put the sausage meat through a bag fitted with a large nozzle, put a line of sausage meat along the pastry, 3 cm from the edge. Fold the pastry up and over the sausage meat. Water the edge, and fold completely over. Cut the pastry, to separate the roll. Milk cut and bake. Do that again, and if you are lucky , again. Roll the pastry out with this in mind.
Sausage meat ::: 3 x 500 gram, tubes of sausage meat, 1/2 loaf of old bread, [ crusts and all.] I am not fussed here, may add more. 500 mils of hot water over bread, cool, mix with hands and pour off excess water, if any. 1 teaspoon of salt , 1/2 teaspoon of pepper, 2 good teaspoons of gravox, mix well. If it ends up a bit wet, add a few Tablespoons of whole meal flour. Note , no onion. I rather use the gravox now. cook in a hot oven

Pudding.Choc. less sugar. Self saucing, Choc pudding in a basin put 1 cup of flour, 1 tsp baking soda, 2 tsp cream of tartar, 2 Tblsp cocoa, 1/2 cup sultanas. mix with 1/2 cup of milk, to make a stiff dough. Note No sugar. Pour over, 1 cup of boiling water 2 tsp golden syrup, 1/2 cup of sugar, 50 grams of butter. Steam 30 minutes. serve with custard, a dollop of cream or ice cream. enjoy

Shortbread .Large lot. cream 500 grams of butter with 250 grams of icing sugar 1 tsp vanilla, 1/2 tsp salt. add 750 grams sifted flour in 3 lots. You can roll and cut into shapes, or I prefer to make cylinders of the mix, wrap in glad wrap, chill in fridge, and slice 1cm thick. put on tray and stamp with a floured pototoe masher, leaves a nice pattern. 150 deg c, untill cooked. Nice and keeps well.

cheese cake.two. This recipe makes two good sized cakes, would serve 24 easy. crumb base.1 pkt wine biscuits crushed 150 grams of melted butter. Put into the bottom of two round sponge tins, chill. custard .,heat in a double boiler 1 cup of milk, 1 cup of sugar ,pinch of salt, grated rind of 1 lemon, 4 egg yolks. till thick, cool. dissolve 2 Tblsp gelatine in 3 Tblsp water, mix into cool custard. cream 450 grams of cream cheese juice of the lemon, add custard and fold in with, 450 mls of whipped cream. set in fridge. Top with cream and anything you fancy. Enjoy.
