Avocado Chocolate Mousse

1/2 cup sugar or honey
1/2 cup warm water
2 medium sized avocados
1 tsp pure vanilla essence
1/2 cup good quality cocoa powder
1 Tablespoon of lemon juice.
Put all ingredients in a food processor & process to combine
refrigerate until required.

Pineapple Blancmange

mix
1 Tblsp of cornflour
2 Tblsp of sugar
1 egg yolk
with a little milk, from 1 cup of milk.

Heat the remaining milk and pour it into the egg mixture
return to the heat and cook for 5 minutes, stirring all the time.

Add and fold in 1 cup of strained crushed pineapple and the stiff egg white. Set in the fridge.

Pickled Asparagus
Wash and cut Asparagus to fit medium sized resealable jam jars. Use tops and bottoms.
Place in each jar
1 clove of garlic
1/4 tsp mustard seeds
1/4 tsp whole pepper corns
1/2 tsp plain salt
1 tsp of sugar
Put the Asparagus into the jars.
Bring to boil a mixture of vinegar and equal amount of water, pour over Asparagus to within 1/2 cm from the top.
Put the lids on.
Precess in a water bath for 20 minutes.

Low Calorie salad dressing.

1 cup vinegar. I used my own vinegar. white vinegar would be nice.
1 cup of water
1/4 cup of chopped mint leaves
1/2 tsp hot English mustard
1/4 tsp celery seeds
1/2 tsp sea salt
1/4 tsp ground pepper
##bring to boil then thicken using
2 level Tbsp cornflour
3 Tbsp vinegar
3 Tbsp water
##add 1 tsp of Sucaryl.
stir while it cools.

I have just made this, tastes good. I will keep you posted, as to how long it will keep.
This was superb on a lamb salad. It will be just as nice used as a dressing for any green salad, or new potato salad.

Fruit filling, Tarts, squares.

2kg of mixed fruit
1 whole sponge cake 4 days old, crumbed
1 litre of stewed apples
1/2 tsp each
cinnamon, mixed spice, nutmeg.
1/2 tsp each
lemon, vanilla, almond, rum, essence.
1 cup of brown sugar
mix well and taste.
Add more spice if needed at this point.
Add 4 beaten eggs
This is not a mixture to keep, has no alcohol.

This mixture made 192 fruit tarts, plus 2 swiss roll tins of fruit square.

sweet pastry and tin glide

great for all cake slices, and tarts
cream 450 grams butter, and sugar. add 2 tsp vanilla 4 eggs, 1 at a time. sift and add 900 grams of flour with 4 tsp baking powder and add. Chill pastry well. knead roll and use a quater at a time. This pastry freezes well, raw or cooked.

tin glide
melt 4ozs of fat add 1oz of vege oil, stir in 2 ozs flour. mix well. keep out of the fridge, in a cool place. You may need to melt and stir a bit to use.

egg yolk custard

put into a bowl
6 egg yolks, 1/3 cup of cornflour, whisk in 1 cup of milk.
set aside.
Put in a saucepan
1 & 1/4 cups of whole milk, 2 tsp vanilla
sprinkle over the milk 2/3 cup of sugar
Do not stir, put on stove and watch for it to simmer.
Add a little hot milk into the cold, while whisking, maybe half, then pour it back into the saucepan, return to the heat. I turned my element down by 1/4.
stir with a wooden spoon until it is nice and thick.
This custard sets real fast, as soon as I noticed it thickening I removed it from the stove, kept whisking while it finished cooking.
I have covered it with cling film to stop it skinning over

I revisited this recipe tonight, I added more vinegar, and reduced the sugar by 1 cup. Added 1 more Tbsp of curry powder.
I felt it resembled the old "Musto pickles", and was as easy.

mixed vegetable pickle

Cook
2 & 1/2kg of mixed vegetables, in
3 liters of water and 250 grams of plain salt.
strain well, add
6 cups of vinegar
2 cups of sugar, bring to the boil
thicken with
1 cup of flour
1 Tbsp of dry mustard
2 Tbsp of curry powder,
1Tbsp of turmeric
mixed with 1 cup of vinegar
cook for 5 minutes

made this for xmas! my first ever and it was awesome
i must say i thought it would never thicken up as i was beating it i was worried at the wetness of it but at around the 15min mark it came together had a wonderful crunchy crust and dense fluff inside
had a bought one the week after that was brought around blerk!
it was like eating empty fuff! like it was full of holes and puffed up as to cost you more
mine was devine! i am making it to take out to a friends for desert tomorrow as i know have a kenwood chef for my 18 wedding anniversary!
yippee no more sore forearm while holding onto a electric beater for dear life
cant wait!

Plum Sauce .[ yellow fleshed plums ]

3.5 kg of plums. .
I have added
3 litres of vinegar [ cider or malt ]
3 cm grated fresh ginger
1 kg of brown sugar
2 Tbsp sea salt
2 tsp gr. mace
1 tsp cayenne pepper
2 tsp gr. cloves
5 tsp gr all spice
It tastes ok right now, I am not going to add anything else until it has simmered for 1&1/2 hours, and has been through the mouli.
Yielded
6 X 750mil wine bottles of sauce.

One Bowl Chocolate cake
Roast pan size cake
3.5 c flour
3.5 c sugar
3 t/s Baking powder
1.5 c cocoa
1 cup oil
2 cups milk
3 t/s baking soda
1 t/s salt
4 eggs
1 teaspoon vanilla
2 cups of boiling water (added at end)
Put all ingredients (except for the water) in a large bowl mix well to a batter. Add boiling water and mix till smooth bake in the over at 160 for 1hr. you can split the mix and make two smaller cakes or make 1 smaller cake and put the rest into muffin tins the choice is completely up to you. This is an excellent cake if you have a large family or just want to impress people. Gets moister by the day so stays nice and fresh very similar to mud cake.

7 Seeded bread

I have just cooked a nice loaf. I started it in the bread maker and finished it in my oven.
2 teaspoons of flax seeds soaked in 2 Tbsp boiling water, left to cool.
I put into the bread maker
3 cups of flour
1 cup of, seven seed grain mix [pak n save]
2 Tbsp milk powder
1&1/2 tsp salt
2 tsp sugar
2 Tbsp soft butter
1 tsp bread improver
3 tsp dried sure to rise yeast
350 mils of warm water..
It is now I put the flax seeds in.
Set the bread maker to seeded bread and let it knead and rise once.
I then took the dough out, shaped it, put it into the bread tin, oiled the top and left it for 1 hour in the airing cupboard covered with a damp cloth.
I baked it @ 220%C for 15 minutes, turned the tin, baked a further 15 minutes, turned the oven down to 180%C for a further 15 minutes. To finish it off I removed the loaf from the tin and gave it 5 minutes so the bottom reached the same colour as the top.
It is a very nice loaf, tasty.

put it through a mouli , then sieve the stones to get all the flesh , makes it thicker...

pavlova....large

Beat until thick and smooth ......approx 15 mins
6 egg whites,
3 Cups Icing Sugar,
2 teaspoons Cornflour,
2 teaspoons White Vinegar,
add 2 Tablespoons Boiling water............,
Pile onto a baking Paper lined oven tray
Cook for 5 minutes at 200 degrees C, then turn down and cook a further
1 1/2 hours at 100 degrees C.
(Leave in oven to cool)

pavlova.large

Beat until thick and smooth .approx 15 mins

2 teaspoons Cornflour,
2 teaspoons White Vinegar,
add 2 Tablespoons Boiling water.,
Pile onto a baking Paper lined oven tray
Cook for 5 minutes at 200 degrees C, then turn down and cook a further
1 1/2 hours at 100 degrees C.
(Leave in oven to cool)
