"Tamarind sauce"

2 liters of malt vinegar ,
110 grams of tamarind pulp ,
1 Tbsp of sea salt ,
1 cup of brown sugar ,
700 grams onions ,
10 grams of whole pickling spice ,
1/4 tsp mace ,
2 whole chili peppers ,
1 tsp each whole black pepper corns and
1 tsp curry powder.
Simmer all together for 1 hour, strain,
bottle ,
cork and mature...
Has a Citrus flavour.[ tamarind]
This did turn out very well.
I could very well be tempted to make this again.
Both my Husband, and lover, enjoy this sauce.

three fruit slice.

thicken with cornflour
1 small can of peaches and juice,
fill the can upwith stewed apples, & add to the pot,
fill the can up with stewed rhubarb, & add to the pot.
while that is cooling,
paint a swiss roll pan with, tin glide, post 20, in here.
line the pan with sweet paste,,
post 20, in here.
I always have some in the freezer. When you use this pastry from the freezer, thaw, knead, roll and use as you would if it was fresh. It handles way better having been frozen.
fill with cold fruit
top with a sheet of sweet paste, prick all over with a fork.
Milk the top if you wish, it is not necessary though as the natural colour is a very good guide of when it is well cooked,
bake 20/30 minutesand nicely browned.at 175% C

Cream Cheese dessert

420 gram can of peaches or apricots
1/2 a cup of brown sugar
100 grams of melted butter
250 grams of cream cheese
4 slices of stale bread, cut crusts off
4 eggs
600 mils of milk

grease a large flat pyrex dish
put in the bottom the drained peaches or apricots
sprinkle over the brown sugar
pour over the melted butter
dot over dts of cream cheese
cover with the slices of bread
mix the eggs and milk together and pour over the bread
Bake for 35 minutes @180 % C

Pickles - that is pretty saucy ... for the recipe board ...
However the tamarind sauce sounds very nice to me :)

microwave macaroni cheese.

2 cups of macaroni
3 cups hot water
1 teaspoons salt
100 grams of butter

1 and 1/2 cups of milk

300 grams of grated tasty cheese
1/4 cup of plain flour
1 and 1/2 teaspoons of dry mustard powder.

Microwave the water, butter, salt and macaroni for 12 minutes
without a lid, stir twice in the 12 minutes.
stand 5 minutes.
Add the milk,
mix together the rest of the ingredients, and stir in.
microwave a further 3 minutes, stir microwave further 3 minutes.
serve.

Gravy, to make ahead of time.

Make up a pkt of , Maggi soup mix, any flavour.
Thicken it with cornflour,
Colour it with soy sauce.
Thin down with vegetable water, if need be.

If there is enough browning's on the pan I will make gravy from the roasting dish, after dinner, and freeze for next time. I am well over, over loading MYSELF before I eat, these days. Enjoy.

I've got a mulberry tree fruiting like mad - can I use these in this recipe instead of blackberries!If I could would I need to add more sugar . thanks for sharing your recipes - have been writing them down like a madwoman!

Pull apart Cheese and onion... Scones.

4 cups of flour,
1 tsp salt,
2 tsp baking soda,
4 tsp cream of tartar,

200grams of grated cheese,
1/2 a medium onion very finely chopped,
1 egg,
100 grams of melted butter,
1 and 1/2 cups of milk, may need a little more

Sift all the dry ingredients,
melt the butter,
beat the egg in a measuring jug,
add the melted butter,
then milk to make up to 2 cups of liquid
add the milk mixture to the dry ingredients ,
mix lightly, adding more milk so the mixture is not crumbly at all,
I tip my scones straight out onto a floured baking tray.
I cut them on the tray, using a wet knife
I sprinkle more grated cheese over the top,
bake 15-20 minutes in a 250%C oven.

Three fruit marmalade.

preserving pan
sugar thermometer

1 kg of grapefruit [poor-mans oranges]
1 kg navel oranges
2 lemons
4 liters water
5 kg white sugar

slice the fruit thinly, discard pips.
Put the fruit into the preserving pan
cover with the water and leave overnight.
Next morning bring the fruit to the boil and simmer uncovered for 1&1/2 hours.
warm the sugar in the oven
Remove from heat and stir in 5 kg of warmed sugar. Stir to dissolve the sugar, then return the pan to the heat
Boil hard until it reaches 222%F---107%C
heat jars in the oven, boil lids
Put into hot jars and seal.. I re use jam jars that self seal.
I don't test jams any more, messsssssy, just use the sugar thermometer.

Self Raising Flour

Sieve twice
2 kg flour,
50 grams of cream of tartar
25 grams of baking soda

Cracker Crackers

4 cups self raising flour
2 Tablespoons oil
1/2 teaspoon salt
1 cup of ice cold water.
Pulse all together in a kitchen whiz, until it all binds together. Cut the dough into 4's and put three into the fridge.
Roll one piece out at a time until the dough is 3 mm thick, cut into crackers , prick well.
Bake in a hot oven 220%C approx 10 - 12 minutes.

You can add powdered stocks, or milk and sprinkle stock powdersor salt on top. I also make very small crackers to serve with a nice dip, etc. Very nice with cream cheese, salmon and caviar.

4 Lamb Shanks[slow cooker recipe]

brown 4 Lamb Shanks, and
1 large onion roughly chopped,
4 cloves of garlic, roughly chopped.
deglaze with
1 cup red wine
Add to the slow cooker along with,
1/2 cup maple syrup
1 cup beef stock
1 teaspoon salt
1/2 teaspoon of ground black pepper
cook 8 hours in the slow cooker
thicken with
3 teaspoons cornflour
3 Tablespoons water

whole egg mayonnaise

1 whole egg
juice of 1 lemon
1 teaspoon whole grain mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
150 mils of sunflower oil
150 mils of canola oil
You will need a stick blender and a tall beaker to make this mayonnaise.
Put the egg into the beaker first
Put the other ingredients carefully on top of the egg, so as not to disturb the egg.
Lower the stick blender in to the bottom without disturbing the ingredients.
Pulse the blender, until the ingredients start to emulsify, tilt the blender to allow the oil to be incorporated.

seafood sauce

1 cup of mayonnaise
1 tablespoon of tomato sauce
3 drops of Tabasco sauce
1/2 a cup of whipped cream, lightly folded in.
Chill

Tartare sauce

1 cup of mayonnaise
1 tablespoon capers chopped;
1 tablespoon of gherkins chopped,
1 tablespoon of parsley chopped.

Oyster sauce

1/4 cup of mayonnaise
3 chopped raw oysters
a drop of Tabasco
I give this a fast burst in the microwave, as all microwaves are different, start with 30 seconds. You are just cooking them.
Pour over a nice rare steak.

Garlic dressing, serve cold
Alimony sauce, serve warm

1/4 cup of mayonnaise
1 clove of crushed garlic
1 teaspoon of parsley, very finely chopped
Give it 30 seconds in the microwave before pouring over a steak.

1/4 cup of Tartare sauce
3 chopped raw bluff oysters
a little chopped chili

Hot chili sauce
Mexican sauce

A small can of mushrooms in sauce,
I used a ladle of mushrooms per serve, probably would equate to a small can, per serve
1 tablespoon chopped capsicums, a mix of colours looks great
1 tablespoon of pineapple pieces
chili sauce , as much as it takes to rock you.I made this sauce very, very hot.
Nice over chicken, steak, baked beans, sausages.

Coleslaw 14 day dressing

1 & 1/4 cups of white vinegar
1/2 cup of water
1 cup of sugar
1 teaspoon celery seeds
1 & 1/2 teaspoons mustard seeds
1 & 1/2 teaspoon salt
1/2 teaspoon turmeric
Bring to a boil, simmer 5 minutes
Cool & poor over coleslaw, chill.
Remove with tongs however much coleslaw, you need.

Chocolate Fudge Sauce

1 can of sweetened condensed milk
1/2 cup of brown sugar
75 grams of butter
1 teaspoon of vanilla essence
melt all together then add
1/4 cup of sifted cocoa
2 cups of sifted icing sugar
thin with cream if you wish
serve hot, over ice cream

Chasseur sauce

1 small can of mushrooms in sauce
25 grams of butter
3 tablespoons of white wine
reduce, until thickened
salt and pepper to taste

Serve hot near or over chicken, steak.

Catalina sauce

1/4 cup of seafood sauce
1/2 chopped tomato
1 tablespoon finely chopped celery
6 chopped shrimps

Put into a small micro-proof dish
microwave 30 seconds, to warm through.
nice over chicken, fish, steak

Brandied Apricot sauce

great over chicken, fish, desserts
Puree a can ofapricots, add the juice and thicken with cornflour. Thicken to coat the back of the wooden spoon.
I never added the brandy until serving time, take out as much apricot sauce you need for one serve, heat and add a dash of brandy. nice.
Don't put the brandy in the sauce, near the stove top.

Egg Salad

Hard boil as many eggs as you need
Shell and cut into 1/4's
Put into a bowl along with chunks of celery
Dress with sour cream loosened with milk
Season with salt and pepper.
Cover, chill well.

You could use yogurt dressing if you wish
Remember to keep egg salad covered at all times.
