sponge cake on the bottom of dish (spread with jam), jam side up. Peach slices, more sponge cake, more peach slices, top layer of sponge cake jam side down. Mix the drained peach juice with gingerale and sherry about a cupful all up. Pour over sponge, making small holes over top so juice mix soaks through. Add custard to the top and once cold and set add cream. leave out the alcohol if you dont want it.
