Help! I am after a nice tofu recipe that is easy and a avid meat eater would enjoy?

Grated zest of 1 lemon
Fresh ginger, cut into a 1-inch cube, peeled, and grated
1 tablespoon honey
3/4 teaspoon cayenne
3/4 teaspoon fine-grain sea salt
1 tablespoon freshly squeezed lemon juice
1/4 cup unseasoned brown-rice vinegar
1/3 cup shoyu sauce (wheat-free soy sauce)
2 tablespoons extra-virgin olive oil
2 tablespoons toasted sesame oil
I marinade mine in the above recipe, cook it until lightly golden, then add it to some soba buckwheat noodles, with some stir fried broccoli & mushrooms.

No - it is not a "theory" - I learned all that in the '70's at uni. It is nothing new - however the soy "industry" is so big now that they "buy" whatever research they want - and it is very difficult to get anything out against soy.

Hence my neighbours starting this website which is now quoted in research and books worldwide ...

Throw that soy stuff out - it will be your best move - and then buy real meat like beef, organic chicken, lamb etc.

the darker side of soya:

Phytic acid in soy reduces assimilation of essential minerals and is not neutralised by ordinary preparation.

Trypsin inhibitors in soy interfere with protein digestion and may cause pancreatic disorders.

The high-temperature processing soy undergoes over-denatures the proteins, it forms MSG (neurotoxin), lysinoalanine (toxic), nitrosamines (carcinogens) and results in high levels of aluminium which is toxic to the nervous system and the kidneys.

Vitamin B12 analogs in soy are not absorbed and actually increase the body’s requirement for B12. Soy foods also increase the body’s requirement for vitamin D. Soy phytoestrogens (isoflavones) disrupt endocrine function and have the potential to cause infertility and to promote breast cancer in women.

Soy phytoestrogens are potent antithyroid agents that cause hypothyroidism and may cause thyroid cancer.

Babies fed soy-based formula receive the estrogenic equivalent of at least five birth control pills per day.

Soy consumption is associated with delayed puberty in boys and premature puberty in girls.

Even moderate intake of phytoestrogens during pregnancy can have adverse affects on the developing foetus and timing of puberty later in life.

Tofu is consumed by Buddhist monks to reduce libido. Researchers theorise that the high phytoestrogen content in soy is a self-defence mechanism that prevents the proliferation of animals who would otherwise eat the plant, by effectively putting them on “birth control pills. ”

In Japan, tofu consumption in mid-life is associated with Alzheimer’s disease in later life.

Average consumption of soy food in China is only 10 grams (2 teaspoons) per day, soy is almost always consumed in a fermented form such as tempeh, natto or tamari which neutralises many of the toxins that actually remain preserved in the modern tofu and soy mince dishes consumed in the West. As a crop, soy is used to fix nitrogen into the soil, it has never been eaten as a staple.

The FDA have never actually given soy protein isolate a GRAS (Generally Recognised as Safe) status due to concern regarding the presence of toxins and carcinogens in processed soy.

I never knew this stuff. My very intelligent, very outspoken cousin eats this stuff all the time. He is a firm animal rights activist blah blah blah but I would have thought he would be aware of this shit. :(

daryl37 - animal rights activists are THINKING about how the world should be - not LOOKING how it is.

He might want to read Lierre Keiths book "the vegetarian myth" - not so much to stop him being a vegetarian - that really is every ones own choice. But to see where his thinking is getting him, and to see the REALITY of life as opposed to what he thinks "should be" ...

daryl... there is a huge amount of public brain washing out there... the more you dig. . the scarier it gets. . but at least you are then informed on BOTH sides of the argument and can make a rational educated decision on what you put in your mouth.

Unless it looks like meat - right down to the texture, tastes like meat, smells like meat and I saw it in it's raw state looking like real raw meat, I wouldn't touch it with a bargepole - this coming from a person who can happily eat (real) meat for breakfast, lunch and dinner.

The last time I posted a tofu recipe, it was ridiculed by a low carb/high fat eater, so I won't go there again - plenty of places on the web for tofu recipes, if you google.

What I'd like to know is why many of the low carb/high fat posters on the designated low carb people thread seem to be so sickly and/or overweight? The thread is a catalogue of ailments.

This is a serious question. (I cannot ask it there because only 'true believers' are made welcome. )Does the low carb/high fat dietary regime attract a number of unwell people who are at wits' end and seeking one more way to try to alleviate their symptoms?

If it really is the answer to New/Old Age eating, then why isn't everyone brimming with good health?

Personally low carb got rid of my depression and I'm losing weight. I think I got the flu once last year, when usually I get it every time someone near me sneezes. Have you ever tried low carb elliehen? Because you seem awfully critical of it. Or do you just not like people not agreeing with you?

Uli - I am a vegetarian and do eat soy, however I am interested in what you are saying. What would you sugesst I eat for protein etc instead? And please don't say meat... .

_sloth_I would recommend cheese and yoghurt if that is ok with your philosophy - and your body.

However I would also strongly recommend you read Lierre Keiths book "The Vegetarian Myth" - not to convince you to change your eating habits - that is entirely up to you of course, but to see and understand how life works - how everything is interacting on this planet and how the human body works.

It is a book that has many many quotes from other books, so you can go and read more if you like and understand the bigger picture. While I don't agree with all her ideas on how we could change the mess we got ourselves into it is a very well researched book and you will find it very interesting. Soy is one part of the book of course.

lil_miss_haley, I'm delighted for you that low carb eating has got rid of your depression, is helping you lose weight and is preventing you from catching the flu. And I might even have read much more about it than you. I have taken from the low carb theories as much as I find helpful and interesting to me personally.

What I do not agree with is the missionary zeal some low carb posters use to promote low carb/high fat theory, as they try to save the 'ignorant masses' from themselves.

There are many exceptionally fit and healthy families following sound low GI, low fat dietary regimes - they're just not the noisy voices on the TM messageboard, which is really a talkback show.

Here poster #1 asks for a tofu recipe, is told to throw his ingredient in the bin and then gets a copied and pasted lecture on its dangers. Everyone here can read, and the internet has immeasurably added to everyone's ability to research, but there lies the problem. 'A little learning is a dangerous thing'.

I've never dismissed the low carb theories, just the missionary zeal!

well, someone only wanted a tofu recipe and the topic's on about the "not so good side" of soy. But I do have to say, all the meat nowadays have been injected with hormones, antibiotics, deworming shots, etc, and will do more harm to your body than eating soy. ;)

Anything taken in too much amounts, no matter how good the food is for your body, can turn bad.

Just personal opinion. :)

Rune... do you have knowledge of NZ meat processing and what is and is not acceptable to give food animals? Or have you been hooked on what happens to meat outside of NZ? ... Hormones eh? nice... . abs' sometimes. . but then can u tell me the withholding period and type of ab? to say that soya is safer than animal protein? . . ignorance is bliss eh... . Just a personal Opinion ;o)

There is heaps of research that shows soy is fine, look it up for yourself. The food police here are always ramming their theories down everyone's throat. Google and see for yourself - you will also find negative reports on low carb diets. I have been told dairy farmers are pushing these high protein diets!
There was a thread on tofu recipes here recently, hope there is something there that appeals.
