depending how big a cake you want I often double or triple this recipe
Milk Chocolate Cake serves 12
200 g (7 oz) Be-Ro Self Raising Flour 225 g (8 oz) caster sugar 1 x 2. 5 ml spoon (½ tsp) salt 25 g (1 oz) cocoa powder, sieved 100 g (4 oz) margarine 2 medium eggs 5 x 15 ml spoon (5 tbsp) evaporated milk 5 x 15 ml spoon (5 tbsp) water few drops vanilla essence
1Heat oven to 180ºC, 350ºF, Gas Mark 4. Grease 2 x 20. 5 cm (8 inch) tins, not loose-bottomed as the mixture would run out. 2Mix flour, sugar, salt and cocoa. 3Rub in margarine. Beat eggs with milk. 4Stir egg mixture, essence and liquids into the dry ingredients and beat well. 5Place mixture in prepared tins and bake for about 30-35 minutes. 6When cold sandwich and top with Milk Chocolate Icing

This is my Mum's chocolate cake she used to make when cooking for shearers, you make it in a roasting dish lined with baking paper.
Melt 8oz butter with 2 Tablespoons of golden syrup, let cool Beat 4 eggs together & 2 cups of sugar. Add to above Then add 4 cups of flour, 4 teaspoons of baking powder, 3 tablespoons of cocco. Mix together 3 cups of milk with 4 teaspoons of baking soda then add to above. Bake for approx 50minutes at 350 F

Put all ingredients (except for the water) in a large bowl mix well to a batter. add boiling water and mix till smooth bake in the over at 160 for 1hr. (Bake in a roasting dish)

I have just made this cake for the 3rd time. First time it came out perfect the second and third time it rose up and when I took it out and stood it on the bench for 10mins to cool before I lifted it out it went right down. It will still be edible but I am dissappointed that it has happened twice now. The only thing I do different from the recipe is cut the sugar by 1cup and the cocoa to 3/4cup. My bp is not old.

this was the recipe that i posted and i can only imagine that maybe it wasn't cooked enough....I have never had it fail but i do check with a scewer to see that it is cooked

Yes hooksie I checked with a skewer also and it came out clean. When I cut the 2nd one it had a thin layer of what looked like uncooked along the bottom. Tasted ok but didnt look nice. Next time I might try cooking in 2 ring tins and see how it comes out. Todays one I cooked for an hour.

As I said earlier, mine always sinks which leaves a perfectly level surface for icing.Whereever I take this cake (post #5 recipe) I get rave reviews - they love my 'mud cake'.I have even halved the recipe for my young daughter to make herself and it fits perfectly in a 23cm round cake tin.I actually have one sitting on the bench which I cooked last night.The icing I'm going to make is chocolate cream cheese frosting.(Best reviews ever).About 1/3 block Philly, 50gms butter - soften and beat together.Dissolve a heaped tablespoon of cocoa in a little boiling water and put this in after you have added a good quantity of icing sugar (3/4 sml bag).I then add a spot or two of milk to get it to the right spreading consistency.My own concoction and measurements don't have to be accurate.This made a lovely thick coating for the entire cake. I then sprinkled it with edible gold stars and glitter.Looked grand.

for a biggie double- Chocolate Sponge Cake.
• 4 eggs, • 3/4c caster sugar, • 1 c of flour, • 2 T cocoa • 1 tsp cream of tartar, • 1/2 tsp bk soda, • 1/2 c milk, • 1 tsp butter,
Cream and jam.
Beat eggs with electric beater till thick. Add sugar 1 T at a time till mix is pale & thick. Discard 2 T of the flour. Sift together the flour, cocoa, cream of tartar & baking soda 3 times, this makes a light fluffy sponge. Sift over the egg mix and fold together until almost combined. Heat milk & butter till butter has melted. Pour this mix gently into the rest and fold together. spread batter into 2 20cm round tins that have been greased & floured & lined with baking paper. Bake each cake for 20-25mins @ 200°C. Cool on racks

Bloody Good Chocolate Cake Mix in order 2 cups sugar 2 eggs 1 cup yoghurt (any flavour) ¾ cup cocoa 200g melted butter 2 teaspoons baking soda 1½ teaspoons vanilla essence ¼ teaspoon salt 3 cups self raising flour (or 3 cups flour and 3 teaspoons Baking Powder) 1 cup black coffee (ie. 1t instant coffee in 1c water) Mix all together, makes 2 round cakes or a roasting tray full, bake at 180oC until knife comes out clean when tested (about 35-45 minutes

Evorotoruas recipe! Still the best around for a large cake, and yummy, easy, and moist. you can leave out the bananas if desired, it's still lovely. Makes a huge cake. Posting for you:
Evorotorua'sChocolate Yoghurt Banana Cake
2 cups sugar 200gms butter or margarine 3 cups self raising flour 2eggs 2 tsp baking soda 1/2 cup cocoa 1/4 tsp salt 2 mashed bananas 1+ 1/2 tsp vanilla essence 1 cup plain yoghurt 1 cup boiling water *add last* Place all ingredients into a large bowl, pouring the boiling water over the butter or margarine to melt it. Mix all ingredients together to combine and that’s it! Pour into a largespring form tin, roasting dish or into muffin cups. Bake as a large cake for around 1hr 10mins, at 180c or in muffin cases 10-12 minutes
Ice with chocolate butter icing. can also be split thru and filled with a choc creamicing, dust top with sifted icing sugar. *makes a large cake or around 25 large cup cakes* *Cake freezes well* Hit search and you will find other's recommendations on this recipe, it has appeared so many times here. I bumped it again about 2 days ago.

In light of the other thread that discusses true credit where true credit is due. I got this from a Kiwanis newsletter several (15!) years ago. Still love seeing my name though! Best recipe ever - even I can't muck it up! Although make sure you use a large cake tin. I nearly set fire to my kitchen the other night - pan overflowed onto the bottom of the oven and I came in from the garden to find smoke everywhere! I took the cake to a dinner party the other night, having sifted a little icing sugar over the top and decorated with sliced kiwifruit - bloody gorgeous!
