If this is made a few days before. how do you keep it fresh and crisp for christmas day! I'm planning to make the pieces maybe one week and a half weeks before, and then a couple of days before christmas put it together

We made a gingerbread christmas tree last year (a whole heap of different sized stars stacked) and it stayed quite fresh for a couple of weeks even when sitting out on our table.People would just break pieces off when they walked past or had a cuppa lol.

Just wrap the pieces in plastic, or keep in ton like any cookies,and assemble just before xmas
