Putting a dollop of jam

in a cupcake. When is the best time to put the jam in! Right at the start when spooning mixture in or halfway thru cooking etc! i dont want the jam to sink to the bottom or anything!

just before you put them in the oven and on top.

Before you start cooking - put 2/3 of the mixture in the muffin tins, add a spoonful of jam then cover with more muffin mixture.Jam rises when it's cooking rather than sinking so if you don't want it burnt on top you need to make sure it's fully covered and not use too much because it expands when it gets hot as well.

A dollop of raspberry jam in the middle of a double chocolate muffin is a treat.

Could work better than trying upteen dozen cupcake recipes to find one with batter thick enough to support the jam!
