Thought I would share this, because these are such a cheap meal option.For one skate wing, cover base of pan with olive oil and dissolve white sugar (I used 3/4 tsp) in it until it is clear, then add the skate wing, turn over frequently until it is browned and cooked through, then add a little soy sauce, mix through and pour over the skate wing.It was really delicious, the person who suggested it to me was Asian so I guess that is the origin.

you can steam them then take the meat off and use it to make whitebait fritters that arnt quite what they should be they are yummy

I also bought some scallops and it is true that they do taste very similar, even though I did the scallops in browned butter.
