What to do with too much jam!

What can I make to use up three jars of strawberry jam - they're not worth giving away because they were my first efforts and are a bit solid. but don't want to waste them either.Any good recipes that would use up a whole lot in one go! :-)

Freeze till needed. Doesn't freeze solid so can be used when needed.

steam pudding/sponge pudding with the jam at the bottom of it

make a simple vanilla cookie and use thumb as indent for jam to go in youm
also muffins
plain butter muffin spoon in half the mix put a dollop of jam the spoon in the rest
spread it on a pizza base with chicken and brie
use it to spread on scone dough roll up at cut into scrolls
also a good half cup of so wouldnt go a miss in a chocolate cake

perhaps reboil with a little water to make it softer if you are worred about it being too solid.

Last lot of strawberry jam I made I added a bit of mint.it is so delicious.

When picking the strawberries, which are around my mint.the smells are just so good.so I thought I would give it a go.got 3 large sprigs.popped them in when jam nearly done.stirred them around then took them out.would only have been in pot 30 seconds and that was heaps to impart the mint flavour.

My chocoholic chocolate cake calls for 1/2 C of jam . makes it rather decadent IMHO

Strawberry Buttermilk Ice Cream
2 cups buttermilk
1 1/2 cup strawberry jam
Stir together & pour into freezer proof pan: freeze firm.Cut/break up into pieces and put into chilled mixing bowl.Whip with electric mixer until fluffy.Return to freezer & freeze until firm.

I make muffins with jam instead of milk, or mix with vanilla yogurt for a yummy sweet snack.

Make home made ice cream, it's easy as and add the strawbery jam. Yummy :) Hope theres no diabetics in your family though hahaha!

Strawberry Jam Muffins.

2 cups flour
2/3 cup caster sugar
2 heaped teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup oil
1 large egg
strawberry jam
Cinnamon
Extra caster sugar for dusting the muffin tops

Heat oven to 200 deg C. Spray muffin pans with nonstick cooking spray.

Sift flour, baking powder, caster sugar and salt. In another basin beat the egg, oil and milk. Combine with the flour mixture but don't over mix. Use half the mixture to partly fill muffin pans and place a teaspoon of strawberry jam on top. Now top with the rest of the mixture. Mix caster sugar and cinnamon and sprinkle on top. Bake until golden.
