OK so I've made my lemon honey

but it still seems to be too runny. Is it just more cooking needed (therefore it will thicken more?) or is there something else? Surplus of lemons this year so I thought I'd try something I've not done before.

My auntie made it today too she says it will thicken as it cools.

Yeah it does thicken as it cools.I've made lots lately and by the time I've got it in my jars what's left in the bottom of the double boiler is cold and set.

Try stirring in a tablespoon of passionfruit syrup, for a lovely Lemon and Passionfruit curd.I've been making this lately, and it is a hit.

Lemon Curd ( Microwave)

1 cup white sugar
3 eggs
1 cup fresh lemon juice
Zest from 3 lemons
1/2cup melted butter

In a microwave safe bowl (2 litre pyrex) whisk together the sugar & eggs until smooth.
Whisk in the juice, zest & melted butter.
Cook in the microwave on High for 1 minute intervals. Whisk well each time.
Keep doing this until it thickens & coats the back of a metal spoon.
Store in sterilized jars for 1 month in the fridge.
