That's right, food colouring.... found that out when I made my own chinese bbq pork from scratch.

Isn't it Char Sui (if thats how you spell it) which has a colouring in it? Chinese BBQ sauce.

Yes its char sui sauce in which you put a bit of red food colouring aswell.

My BBQ pork gets that red layer in the meat too and I don't add that stuff. Salt the meat well then BBQ long and slow(I do 4hours) over charcoal and it will come, its the same reason ham stays pink and corn beef too I suspect not sure but delicious non the less.
