I'd still like to know what pickles does with all the litres of vinegar she makes.I did ask, but didn't get an answer.Maybe she'll see it here, though a designated thread with one's name at the top doesn't necessarily guarantee that you'll get a reply ;-)

Hi, for making home made Peanut Butter WITHOUT any extras; I just dry roast mine in a pan - or it can be done gently in the microwave - then just add to the blender (and almost walk away) after a wee while the natural oil in the nuts comes out to make the most natural peanut butter! The longer you leave it the more oil seems to come out. Try a small amount on your first attempt to see how it goes for you and what texture you like your P butter at. :)

Must try that.At the Nelson market we are lucky to have the famous Pic manning his stall selling his pure peanut butter.You can buy it in local supermarkets too and online.
I only buy Pic's peanut butter but next time I'm going to make it & see how I go.

Can't beat it on toast, though I've started putting sliced fresh fruit on my hot toast for a change while there's so much in season.Fresh Black Boy peaches on wholegrain toast are a super combo.

Wow, fresh tomatoes on toast is about my limit . would never have thought of fresh fruit but I suppose it's just unprocessed jam, really. I was lucky enough to be given a big bag of BB peaches & I just throw them in the freezerthey peel really easily when frozen .just a burst in hot water & bingo, skins slide off.

Sticky Date and Coconut Cake
Ingredients 1 cup dates 1 cup water 1 tsp baking soda 60g butter 1 beaten egg 1tsp vanilla 1 cup sugar 1 1/2 cups flour 1 tsp baking powder
Method Preheat the oven to 180C. Grease 20cm round cake tin with butter. Place the dates, water and baking soda in a small saucepan on a low heat and boil until the dates are soft. Set aside. Cream the butter and sugar (don't be alarmed if it seems sugary!), then beat in the eggs and vanilla. Sift the flour and baking powder, then combine with the butter mixture. Add the date mixture. Pour into a cake tin and bake for 35 minutes until it feels firm. Remove from oven. While baking make the topping. (In my house I normally make a double mixture of topping as this is my favourite part!)
Ingredients 1 cup shredded coconut (must be shredded not desiccated) 1 cup brown sugar 60g butter 2 tbsp milk
Method Put all ingredients into a saucepan. Warm this mixture gently until pourable then pour over cake and bake for another 25 minutes or until an inserted skewer comes out clean. Cool on a rack at room temp then serve.

I remember these when i was a kid, so yummy. My twist on the recipe that i do is get a tin of black doris plum halves and use a half plum instead of the jam. Absolutly Scrumo.

Slow cooker chicken nibbles
Put into your slow cooker; 1/3 rd cup of Tomato sauce 1 Tbsp vinegar 1 tsp worcester sauce 2 Tbsp brown sugar 1 Tbsp jam 2 tsp salt add 1 kg of chicken nibbles, dredged in flour
Cook on auto 6 - 7 hours

chili sauce.hot
I am still using this sauce, it has kept well.
2 cups of white vinegar 2 teaspoons of sea salt 100 grams of halved Habanero, Red Savina, chili I simmered them until the chili were soft, and the liquid reduced by half, there abouts I poured all into a narrow necked glass jug and used the stick blender to break down all the seeds, etc 1 and 1/4 cups of sauce I will mature it in the fridge for 3 months, then decide if it needs something else.
