there is only a recipe for making marshmallows, not shortcake in my version.

Old Edmonds Marshmallow Shortcake:

Base: 125g butter, softened, 125g sugar, 1/2 tsp vanilla essence, 1 egg, 225g flour, 1 tsp baking powder. Bake 25 mins @ 180°C [I assume you are familiar with this recipe so I won't add the base Method? ]

Marshmallow: 1 C cold water, 4 tsp gelatine, 1 C sugar, 1 egg white, 1 C icing sugar. To make marshmallow: Place cold water in a saucepan. Sprinkle over gelatine. Add sugar. Bring to boil. Boil for 8 minutes. Cool. Beat egg white until stiff. Fold in icing sugar then slowly pour in cooled gelatine mixture. Beat until stiff and thick [ abt 3 mins]. Spread over cooked shortcake immediately. Sprinkle with coconut, or allow to set and ice.

Many thanks fot the old Edmnds Marshmallow Shortcake....
I lent my old one out that was passed down from my mum and it never came back...
I learnt my cooking skills from my mum nd her Edmnds book...
