I should think everyone knows the one which goes " Never trust a skinny cook " but how many others have you heard of ? I like this one from Alexa Johnston's " A Second Helping ":-
" No mean cook can cook well ; it calls for a generous spirit, a light hand and a large heart ".

All the top chefs praise butter as it carries flavour perfectly. Plenty of it used in French cuisine too. And duck fat, which I must start using as it's the most beautiful stuff ever - soft and silky!

Yep, love butter ... Butter brings out the real flavour and gets the taste buds going... though having said that, do use oil for most cooking but if something special and needing that nice finishing taste then butter is used... Only problem with butter is I got too watch my colesteral (sp) levels, lol.

Julia Child loved to use butter as well, as she said;
“Many aspects of my method are based on my feeling and experience. For instance, I always give my bird a generous butter massage before I put it in the oven. Why? Because I think the chicken likes it—and, more important, I like to give it”.
So be like her and Boutez en Avant! (Charge ahead)
