Better still, make these. The beauty of this recipe is that you can freeze these as well.
AVOCADO, BRIE AND SMOKED CHICKEN MUFFINS - thanks to brianmac (aka cookessentials)
3 cups plain flour- Pam added a note that “I always use high grade” 2 tsp baking powder ½ tsp salt 1 tsp dried mustard 125g brie, diced ½ smoked chicken breast, diced 1 avocado, stoned, peeled and diced (not too small-good size chunks) 1 cup grated cheddar cheese 2 eggs 1¾ cups milk 100g butter, melted and cooled
Sift the flour, baking powder, salt and mustard into a bowl. Toss through the smoked chicken, avocado, grated cheese and half of the brie. Make a well in the centre. Mix together the eggs and milk, then blend the wet ingredients into the dry ingredients. Divide the mixture evenly between 12 well-greased muffin tins. Top each with a piece of the remaining brie. Bake at 220°C for 18-20 minutes. Cool in the tins for 5 minutes.

GUACAMOLE WITH PEAR AND POMEGRANATE SEEDS
1/3 cup white onions, finely chopped 3 to 4 serrano chiles, finely chopped, with seeds 1 teaspoon coarse salt 2 pounds ripe California avocadoes (about 4 large) 2 to 3 tablespoons fresh lime juice 3/4 cup pear, peeled and finely diced 3/4 cup seedless grapes, halved 3/4 cup pomegranate seeds
Special equipment: molcajete y tojolote (mexican mortar and pestle) or food processor
In a molcajete or food processor, grind onion, chiles, and salt into a rough paste. Gradually add the avocado, coarsely mashing it (you'll want it to be chunky). Stir in the lemon juice. Fold in the pear, grapes, and 1/2 cup of the pomegranate seeds. Sprinkle remaining 1/4 cup pomegranate seeds over the guacamole and serve.
Makes 8 servings.
I found this exotic recipe on the web.It sounds like food for the gods :)
And guacamole served with corn fritters and bacon goes down a treat. :)

I tasted my very first guacamole on a youthful Big OE in a cliff top restaurant, while watching the La Quebrada cliff divers of Acapulco.No guacamole has ever tasted quite the same since :)

I sometimes make a dessert which is similar to a chocolate mousse (and which vegetarian, vegan, dairy free): I would call it "Choc avocado mousse" maybe - it certainly tastes way different from the traditional dairy version.
2 or more ripe avocados, the meat scooped out of the shell 3 tablespoons honey (more or less to taste or any other sweetener) 1/4 cup cocoa powder 1/2 teaspoon vanilla extract (optional) pinch of salt
Use a blender or food processor to blend the avocados until smooth. Add the rest of the ingredients and blend again until everything is combined. Add more or less sweetener according to your taste. Chill for at least 2 hours before serving.

Yes, you can. Moore Wilson sells large bags of free flow avacado's. They are halves,skinned and stone removed. I would say sprinkle with emon juie to stop browning, then lay on a tray and freeze and then pop into a sealed bag.

Avocado icecream is also quite common - you'll find plenty of recipes online.I've never had the courage to try avocados in a sweet dish however!
