Would anyone have this recipe and be kind enough to post it for me. I have an older Edmonds Recipe Book (1983) but it does not contain the kumera soup recipe. Many thanks in advance.

Compliments of elliehen Kumara Soup
Saute: 4 Tbs (75g) butter 2 cloves garlic 1 tsp grated ginger (from frozen ginger root) 1/2 to 1 tsp curry powder Toss in 500g peeled and chopped kumara Cook 1-2 mins and don't brown Add 1 cup vegetable stock Cook covered 10 mins until tender Drain and reserve liquid, puree solids & then combine Thin with approx 3 cups milk Garnish with 1/4 cup cream and chopped spring onions

i have a large colour Edmonds book and the Kumara soup is bit different and very easy - yummy too.
25g Butter (i use bit less)
1 large onion Chopped
1 large Golden Kumara chopped
1 large potato chopped
1/2 teaspoon curry powder
3 cups of chicken stock - i often put 4 in to go a bit further plus pretty thick?
1 - 2 cups milk
Melt butter, put vegs and curry powder in pot for about 5 mins or until onions soft, cover with stock, bring to boil then simmer to vegetables soft.
Cool then blend till smooth, when reheating back in post add milk, more or less depending on the consistancy you are wanting.
