Easy peasy... all I did is roast the capsicums until the skins blackened, put them in a bowl straight from the oven until they sweated and cooled, peeled the skins, deseeded and put into a blender and pureed. I then added a tablespoon or so ofolive oil, a handful of cashew nuts and parmesan, seasoned with salt and pepper and blended some more. Voila! Great on crackers, etc

ETA: the longer you bake the capsicum to allow to dry out the better as they are very juicy and this makes the dip quite runny. bake at a low temp
